Ingredients

2 cups quartered fresh strawberries
1 cup reduced fat cream cheese softened
½ cup part skim ricotta cheese
¼ cup granulated sugar
¼ cup strawberry jam
½ cup crushed nilla wafers
1 teaspoon vanilla extract
4 tablespoon whipped cream

Instructions

In a medium mixing bowl, using a hand mixer, mix the ricotta cheese, cream cheese, and sugar until smooth. Refrigerate.
In a small mixing bowl, combine the strawberry jam and strawberries.
Spoon ¼ cup of strawberry mixture into each 8 ounce parfait glass. Layer with 2 tablespoons of ricotta mixture, 2 tablespoons of cookie crumbs, 2 tablespoons of ricotta mixture, ¼ cup strawberry mixture and 1 tablespoon of whipped topping.
