Grumpy and I have been empty-nesters for several years now. With the kids gone, enjoying leftovers for more than one day can be pretty tiring. Creating recipes for two became something that I just had to start doing.
I found that I loved creating recipes for two. We love to have a variety in our meals more and recipes for two made it possible to do so more often. We still can have delicious homemade comfort food that we loved to have as a big batch recipe only in a smaller batch recipe.
I also love making recipes in small serving dishes (also known as small plate recipes). I have a thing for mini food and dishes! My addiction could be for worse things, right? I guess you could say I'm also addicted to creating recipes for two also.
The easiest Scalloped Potato recipe
There are a few recipes that Grumpy really loves. Scalloped Potatoes made with leftover ham is one of those things. He actually loves them so much, he requested I make this recipe and even helped me out in the kitchen.
When it came to peeling and slicing the potatoes, he made the potato slices using the mandoline to get thinly sliced potatoes. I kind of think he just wanted to use the fancy potato slicer!
The sauce for these scalloped potatoes is a white sauce that is flavored with chicken broth base and mayonnaise. Don't let the mayonnaise scare you, it adds so much flavor you will not want to skip out on it.
What you need to make this recipe
Potatoes: My favorite potato is the Yukon Gold. I love the color and buttery flavor of this potato. It also bakes up nicely and is a perfect choice for scalloped potatoes.
Ham: Any leftover ham will work. I used the leftover ham from this Cider Bourbon Glazed Ham, but you can also buy individual ham slices and dice them up.
Gratin Dishes: I love these gratin dishes. You can also use a smaller 1 quart baking dish. These are perfect for this scalloped potato recipe.
Boullion base: I like to add the bouillon base to my scalloped potatoes. I feel it adds great flavor. I recommend that you don't skip this ingredient.
Cooking Spray: I highly recommend coating the baking dish with a non-stick cooking spray.
How to tailor this Scalloped Potato recipe to your own taste
This scalloped potato recipe can be changed in a few ways to tailor it to your own taste. One of the ways is to add some shredded cheese. Many people love au gratin potatoes and cheddar cheese is the perfect solution to making these. All you need to do is add about ½ cup of cheese and to the white sauce and voila, you have a cheese sauce!
If your significant other doesn't want cheese in their scalloped potatoes and you do, this recipe is also easy to adjust! Sprinkle some shredded cheese into the layers of the dish for the cheese lover, and just leave the cheese out of the other one.
Top off the potatoes with a sprinkling of grated cheese. Parmesan or Asiago, any hard cheese will work. This will give it a bit of a crispy cheesy topping.

Scalloped Potatoes for Two

Ingredients
- 2-½ cups thinly sliced potatoes
- 2 tablespoons butter
- ¼ cup chopped onion
- 2 tablespoons flour
- ½ teaspoons salt
- ¼ teaspoon pepper
- 1-½ cup milk
- 1 teaspoon bouillon base
- 1 tablespoon mayonnaise
Instructions
- Preheat the oven to 375 degrees F.
- In a medium-sized saucepan, melt the butter until bubbly. Stir in the onion and cook for 2 minutes, or until translucent.
- Whisk in the flour, salt, and pepper and cook for 1 minute.
- Whisk in the milk and bouillon base. Bring to a boil and reduce heat to low. Cook for 5 minutes, or until sauce begins to thicken. Turn off the heat and whisk in the mayonnaise.
- Place some ham at the bottom of the prepared baking dish. Cover with a layer of sliced potatoes, then cover with a portion of the white sauce. Add one more layer of ham and potatoes and cover with sauce. Divide this evenly between both baking dishes if using two gratin dishes.
- Bake for 25 minutes. Reduce heat to 350 and bake for 20 minutes more, or until potatoes are fork-tender.
- Optional: Turn the broiler on high and broil the top of the potatoes for 1 minute, or until the potatoes begin to crisp and brown on the top. Cool at least 10 minutes prior to serving.

This was a hit wtih my husband and me. Thank you for a recipe for two! This was a main dish for us and was plenty filling. I served it with sweet peas on the side. I baked it in my Ninja Foodi flip air fryer, following the recipe adding shredded cheddar on the top. I adjusted the baking time:, 375 for 25 minutes and 350 for 10 minutes. The cheese melted and browned up with no need to turn on the broiler.
