These Leftover Thanksgiving Stuffing Muffins are crispy, savory, and made in just minutes using your air fryer. They're the perfect way to use up holiday leftovers and serve them in a fun, hand held twist everyone will love.

My family loves Thanksgiving leftovers, and I love finding different ways to repurpose them! These stuffing muffins are similar to my Leftover Thanksgiving Turkey Casserole, but made in individual muffin cups and air fried to get the best of the crispy bits from the leftover stuffing!

Chopped turkey: adds hearty protein and uses up the star of Thanksgiving dinner.
Gravy: brings moisture and flavor to the filling.
Cranberry sauce: adds a bright, tart contrast on top of the savory filling.
Ingredient Substitutions
- Use leftover shredded rotisserie chicken instead of turkey if that's what you have on hand.
- Swap the mashed potatoes for mashed sweet potatoes.
- Use cornbread stuffing if that's what was served at your table.
- Swap the cranberry sauce with Cranberry Chipotle Sauce for a touch of spice.

Variations
- Add shredded cheese to the filling before air frying the 2nd time.
- Stir in chopped green beans or peas for extra veggies.
- Top with french fried onions before serving for a crunchier finish.
Top Tips
- Make sure to press the stuffing up the sides of the muffin cups firmly so they hold their shape.
- Don't overfill the muffin cups with the turkey mixture. One large scoop per cup is just right.
- Let them cool for a few minutes before removing from the silicone liners so they hold together.

Storage and Reheating
Store leftover muffins in an airtight container in the fridge for up to 4 days. Reheat in the air fryer at 350 degrees F for 5-7 minutes. They can also be frozen and reheated straight from frozen, just add a few extra minutes in the air fryer.

Leftover Thanksgiving Stuffing Muffins
Equipment
- Jumbo silicone muffin cups

Ingredients
- 2 cups stuffing
- 1½ cups mashed potatoes
- 1 cups chopped turkey
- ½ cup gravy
- ½ cup cranberry sauce
Instructions
- Form a ½" layer on the inside of a jumbo silicone muffin liner. Press stuffing up from the bottom of the cup and into the side of the liner to form a cup.
- Air fry the stuffing cups in the air fryer basket for 10 minutes at 400°F. Add the turkey, mashed potatoes, and gravy to a large bowl and stir to combine.
- Remove the stuffing cups from the air fryer and using a large cream scoop, fill the stuffing cups with one scoop of filling.
- Return cups to the air fryer basket and bake for 5 minutes at 350°F, until meat filling is warmed through and stuffing cups are golden brown and crispy.
- Remove the stuffing muffins from the air fryer and let cool for 5 minutes. Add dollop of leftover cranberry sauce to the top of the turkey filling. Drizzle with more warmed gravy if desired.
