Instant Pot Pork Tenderloin

Ingredients
- 2 pounds pork tenderloin , cut into thirds
- 1 tablespoon olive oil
- 1 small onion , diced
- 2 cups beef broth
- 1 tablespoon water
- 1 tablespoon cornstarch
Instructions
- Use the instant pots sauté function to sear the pork. Add the olive oil and heat until instant pot indicates it is hot.
- Place the pieces of pork tenderloin in the pressure cooker and sear for 2-3 minutes on each side, until all sides have browned. Transfer pork from instant pot to a plate and set aside.
- Add the onion to the instant pot and saute for 3 minutes, until onions are softened. Be sure to scrape any browned bits from the bottom of the pot with a flathead wooden spoon. Press cancel on the instant pot to turn off the saute setting.
- Carefully add the beef broth to the instant pot and deglaze the bottom of the pot. Place the lid on the pot and turn the steam valve to the sealing position. Press the manual setting and set the timer for 3 minutes on high pressure.
- Once the 3 minutes are up, the instant pot will beep. Allow the instant pot to do a natural release for 15 minutes. (timer will automatically start on instant pot).
- After the natural pressure release, turn pressure valve to the venting position to allow a quick release of remaining pressure. Remove the pork from the pot and place on a plate tented with foil. While pork rests, make the gravy.
- Turn the instant pot on the sauté setting and bring the broth in the pot to a boil. Place the cornstarch and water in a small bowl and stir to combine.
- Once the broth is boiling, using a hand whisk, add the cornstarch slurry to the broth, whisking constantly. Cook for 1 minute, until gravy thickens.
- Serve sliced pork tenderloin topped with gravy.
