Large fresh shrimp
Olive oil

Dried linguine pasta
Parmesan cheese

๐ช Instructions
- Cook pasta in a large pot of water according to package directions. When done cooking, reserve ยผ cup pasta water, then drain remaining pasta cooking water and set pasta aside in mixing bowl.
- While the pasta cooks, in a small bowl, toss shrimp with salt and black pepper to coat.
- Heat a large skillet over medium heat with a small amount of olive oil until hot.
- Carefully add shrimp mixture to hot skillet and cook for 2-3 minutes on each side, until shrimp turn pink.
- Add cooked linguine to the shrimp and using a pair of tongs, toss to combine. Remove from heat and set aside.
- Place lemon juice, fresh thyme, and lemon zest in a small saucepan and bring to a boil. Remove from heat and add the butter, stirring until butter just melts.
- Stir the lemon butter mixture and pasta water into the pasta and shrimp mixture. Toss to coat, sprinkle with 1 teaspoon fresh thyme to garnish and serve with lemon wedges
