This easy recipe reminds me of summer mornings when my mom would make pancakes and would always have some kind of fruit syrup or sauce on the table. If you'e tried my Strawberry Rhubarb Compote or Rhubarb Simple Syrup, you'll love how this strawberry syrup adds that same homemade touch to your meals.

Simple process: just a few ingredients and under 20 minutes of simmering.
Fresh flavor: bursting with real strawberry taste, enhanced with a touch of extract.
Multi-use: works as a pancake syrup, dessert topping, or cocktail mixer.
Key Ingredients for Strawberry Syrup

- Strawberries: fresh berries bring natural sweetness and a bright color.
- Granulated sugar: balances the tartness of the berries.
- Strawberry extract: deepens the berry flavor, making the syrup more concentrated.
Ingredient Substitutions
- Brown sugar instead of granulated sugar for a richer, caramel like sweetness.
- Frozen strawberries can be used when fresh berries aren't in season.
- Vanilla extract in place of strawberry extract for a softer, rounded flavor.

Variations for Strawberry Syrup
- Citrus twist: add a splash of lemon or orange juice while simmering.
- Spiced syrup: simmer with a cinnamon stick or a few cloves for warmth.
- Berry blend: mix in raspberries or blueberries for a mixed fruit syrup.
Tips for the Best Strawberry Syrup
- Mash gently: use a potato masher to help release juices without over-pureeing.
- Strain well: press with the back of a spoon to get every drop of syrup.
- Cool completely: let the syrup rest before storing so it thickens properly.

How to Store
Store the strawberry syrup in an airtight container in the fridge up to 2 weeks or in a freezer-safe container up to 3 months.
