This homemade strawberry syrup is a quick and flavorful recipe that turns ripe strawberries into a sweet topping or drink mixer you'll use again and again.
Place the strawberries, sugar, and water in a medium saucepan over medium heat. Bring to a boil and then reduce heat to simmer using a potato masher to break the berries down as they cook.
Simmer over low heat for 15 minutes, or until the berries are mushy and sauce has thickened slightly. Stir in the strawberry extract.
Strain the syrup using a fine mesh sieve into a small bowl, being sure to press with the back of a spoon to get all the juice without any of the fruit pulp.
Transfer the syrup to an airtight container and allow to cool completely. Store in the refrigerator.
