    1 Head of cauliflower, riced

    Full-fat coconut milk

    Powdered sweetener (optional) and salt, to balance the flavors

    Cilantro

    🔪 Instructions

    1. Add the riced cauliflower and coconut milk to a large skillet. Season with salt and sugar and bring to a boil over medium high heat.
    2. Turn the heat down to medium low and simmer for 10 minutes, until the cauliflower is tender.

    Store any leftover coconut cauliflower rice in an airtight container in the fridge up to 3 days.

    📖 Variations

    Stir in 1 teaspoon fresh lime juice and serve with a squeeze of lime zest.

    Add ¼ teaspoon coconut extract for extra coconut flavor.

    Sprinkle with unsweetened toasted coconut flakes for added texture.

    To reduce the amount of fat, use lite coconut milk in place of the full fat coconut milk.

    💭 Tips

    Save time and use frozen cauliflower rice instead of fresh cauliflower rice. It does not need to be thawed, just place it in the dish with the coconut milk and proceed as directed.

    I like to use canned coconut milk that is full fat. Coconut cream can be used in place of coconut milk, but I recommend reducing the amount of cream to keep the saturated fat down.

    • 1 head cauliflower
    • 1½ cups coconut milk
    • ½ teaspoon salt
    • 1 tablespoon classic monkfruit
    • 1 tablespoon chopped cilantro , optional

    • Add the riced cauliflower and coconut milk to a large skillet. Season with salt and sugar and bring to a boil over medium high heat.
    • Turn the heat down to medium low and simmer for 10 minutes, until the cauliflower is tender.
    • Remove from heat and garnish with cilantro (if using).
