Oatmeal Raisin Walnut Cookies
Equipment
- Parchment Paper , or silpat

Ingredients
- 1¾ cup old fashioned oats
- 1 cup flour
- ¾ teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt , optional - use only if using unsalted butter
- 10 tablespoons butter , softened
- 1 cup light brown sugar , packed
- 1 large egg , room temperature
- 1 teaspoon vanilla extract
- 1 cup raisins
- ½ cup chopped walnuts
Instructions
- Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
- In a medium mixing bowl, combine oats, flour, baking powder, baking soda, and salt. Set aside.
- With an electric mixer on medium-high speed, beat butter and brown sugar until smooth. Add egg and vanilla and beat until light and fluffy. Reduce speed to low and add flour mixture, mixing until just incorporated. Add raisins and nuts and mix until evenly distributed.
- Scoop cookie dough with medium-sized cookie scoop onto parchment-lined cookie sheets. Bake 12-14 minutes. Cool 5 minutes then transfer to a wire rack to cool completely. Store in a sealed airtight container.
Cooking time is for mixing and baking 1 tray of cookies. Add additional 12-14 minutes per tray in the oven.

how much salt? it's not on the ingredients list when it says to combine the dry ingredients.

Hi Audrey, thank you for reaching out. If you are using unsalted butter, you can add a teaspoon of salt to the recipe. I leave the salt out if I am using salted butter. Thanks! Shelby

I just made these and they are delicious. I used whole wheat flour and 1 cup of walnuts. I also added some cinnamon just because I could and we love cinnamon. They only took 9 minutes in my oven.
My sister came by and tried them while they were still warm and had to have the recipe.
These are not overly sweet and will be more like a breakfast cookie for us.
I will definitely be making them again very soon.
