    Baked Strawberry Donuts

    Strawberry Donuts are an easy baked donut recipe made fresh strawberries and topped with a sweet strawberry glaze. These delicious donuts are packed with bright strawberry flavor and make an easy breakfast or and are delicious with a hot cup of coffee or tea.

    Vegetable oil 

    Whole grain cereal flakes

    Almond milk

    Fresh strawberries

    All-purpose flour

    Baking powder

    Ground cinnamon

    Large eggs

    Brown sugar

    Powdered sugar

    Vanilla extract

    Nonstick baking spray

    🔪 Instructions

    1. Preheat oven to 400. Spray donut pans liberally with nonstick baking spray.
    2. In a medium bowl, combine cereal and milk; let stand until softened, about 15 minutes. In a large mixing bowl, using a hand whisk, mix together flour, baking powder, cinnamon, and salt. Set aside.
    3. In a separate bowl, using a hand whisk, mix oil, egg, and sugar until combined. 
    4. Stir the egg mixture into the cereal mixture. 
    5. Fold the dry ingredients into the wet ingredients. Fold in the chopped strawberries.
    6. Prep a piping bag by cutting tip to make a hole about ½ inch wide. Put the donut batter in the piping bag and pipe into prepared donut pan. 
    7. Top donut batter with sprinkles of crushed cereal flakes.
    8. Bake donuts for 20 minutes, until a toothpick inserted in the center of donut comes out clean. 
    9. Cool donuts in baking pan on cooling rack for 5 minutes, then turn out onto wire rack; let cool completely.
    10. Combine 1 cup of powdered sugar, strawberry puree, and vanilla. Stir until well combined. Add remaining ½ cup powdered sugar and stir until smooth.
    11. Drizzle donuts with the strawberry glaze.

    🥫Storage

    Room temperature: Store baked strawberry doughnuts in an airtight container on the counter up to 4 days

    Freeze: store in an airtight freezer safe container up to 2 months.

    📖 Variations

    • Whole milk can be used in place of almond milk.
    • Skip the glaze and dip the tops of strawberry cake donuts in melted butter, then in a glaze made with confectioners' sugar and milk.
    • Substitute 1 cup crushed freeze-dried strawberry for fresh strawberries
    • Substitute 2 egg whites for the large egg to reduce fat more.

    💭 Tips

    • A plastic bag (storage bag) can be used in place of the piping bag.
    • When cutting the piping bag, be sure to cut far enough up from the tip to allow a thick amount of batter to fill the donut molds

    When developing this recipe I took the concept of a muffin made with breakfast cereal and turned it into a baked donut. I used the same method of soaking cereal in milk and added fresh strawberries to the batter. The cereal crunch top is for added texture and the glaze made with pureed strawberries intensifies the flavor of the muffin.

    Ingredients
      

    For the Donuts

    • ½ cup vegetable oil plus more for tin
    • 1¾ cups whole grain cereal flakes , divided
    • ¾ cup unsweetened almond milk
    • ½ cup chopped strawberries
    • 1 cup flour
    • 2 teaspoons baking powder
    • ½ teaspoon ground cinnamon
    • ¼ teaspoon salt
    • 1 large egg lightly beaten
    • ¼ cup brown sugar , packed

    For the Glaze

    • ¼ cup pureed strawberries
    • 1½ cups powdered sugar
    • ½ teaspoon pure vanilla extract

    Instructions
