    Chocolate lovers will love this Bourbon Fudge recipe! With chocolate fudge as a base layer, a bourbon infused praline caramel is in the center with a dark salted chocolate topping. This homemade fudge is made with cocoa powder, confectioner's  sugar, caramels, pecans, and dark chocolate with a sprinkling of flaky sea salt.

    Butter

    Baking cocoa

    Granulated sugar

    Milk

    Confectioners' sugar

    Vanilla extract

    Pecans: choose a roasted and unsalted pecan for best flavor.

    Dark chocolate chips: choose a high quality chocolate, one that will melt smoothly.

    Flaky sea salt or grey sea salt

    Salted Chocolate Bourbon Praline Fudge

    🔪 Instructions

    1. Line a square pan with parchment paper. Set aside.
    2. In a 2-quart saucepan, melt butter over medium heat. 
    3. Stir in cocoa powder, granulated sugar, and milk. Stirring constantly bring sugar mixture to a rolling boil. 
    4. Remove from heat and quickly stir in confectioners' sugar and vanilla extract. Pour into prepared pan and set aside.
    5. In a heatproof bowl, microwave caramels and bourbon on high for 1-¼ minutes or until melted. just melted. 
    6. Stir nuts into caramel mixture and spread caramel over top of the fudge. 
    7. In a small microwave safe bowl, heat dark chocolate chips on high for 30 seconds or until melted; spread over caramel layer. Chill until firm.

    🥫Storage

    Room temperature: can be stored 2-3 days (not the preferred method of storage).

    Refrigeration: stored in an airtight container  up to two weeks in the refrigerator is the preferred method of storage for this bourbon fudge recipe. 

    Freezer: store fudge, individually wrapped in plastic wrap and placed in an airtight container, up to 3 months.

    📖 Variations

    • Use milk chocolate chips in place of dark chocolate.
    • Swap out pecans for other nuts like walnuts or almonds for a different texture and flavor profile.
    • Experiment with flavored bourbons like vanilla or cinnamon-infused bourbon for an extra layer of complexity.
    • Substitute brandy or dark rum for the bourbon.

    💭 Tips

    • A double boiler can be used to melt the caramels and the chocolate portion of this recipe, instead of using the microwave.
    • Line your baking dish with parchment paper, leaving an overhang on the sides. This will make it easier to lift the fudge out for cutting.

      Where in the recipe is "brown" sugar? Also, I don't see salt in the recipe.

        Hi Mary, the recipe uses granulated sugar in the boiled part of the recipe. The only salt is the gray sea salt sprinkled on top of the chocolate and that is optional and to taste. I will update the recipe to reflect this so there is no confusion. Thanks!
