Ingredients

½ cup butter
⅓ cup baking cocoa
¼ cup granulated sugar
¼ cup milk
3½ cups confectioners' sugar
1 teaspoon vanilla extract
30 caramels
1 tablespoon bourbon
1 cup pecan pieces
1 cup dark chocolate chips
1 teaspoon flaky sea salt , optional

Instructions

Line a square pan with parchment paper. Set aside.
In a 2-quart saucepan, melt butter over medium heat.
Stir in cocoa powder, granulated sugar, and milk. Stirring constantly bring sugar mixture to a rolling boil.
Remove from heat and quickly stir in confectioners' sugar and vanilla extract. Pour into prepared pan and set aside.
In a heatproof bowl, microwave caramels and bourbon on high for 1-¼ minutes or until melted. just melted.
Stir nuts into caramel mixture and spread caramel over top of the fudge.
In a small microwave safe bowl, heat dark chocolate chips on high for 30 seconds or until melted; spread over caramel layer. Chill until firm.
Remove chilled fudge from the pan and cut into 36 equal pieces. Store in an airtight container in the refrigerator up to 2 weeks.
