    It takes just a few simple ingredients to make this delicious breakfast recipe!

    🥘 Ingredients

    Here is everything you need to make this creamy, delicious breakfast!

    • Milk: I used whole milk for this recipe, however non-dairy milks can be used in it's place.
    • Old-fashioned oats: these work best as they lend some chew to the oatmeal. These are also known as rolled oats,
    • Pumpkin puree, be sure to buy the can that says puree, not pie filling. Or, make your own homemade pumpkin puree.
    • Brown sugar: light or dark will work. I prefer the dark brown sugar for a deeper flavor.
    • Pumpkin pie spice: to add the warm fall flavors to the oatmeal.
    • Vanilla extract: compliments the flavors
    • Chia seeds: add fiber and healthy fats to the oats.
    • Pecans: chopped

    Using pure pumpkin in this overnight oatmeal adds vitamins A & C for an immunity boost to your meal.

    Just a touch of sugar sweetens the oatmeal and pecans add a buttery nut flavor.

    Use a spoon or cover with the lid to mix.

    Once the overnight oats are mixed, cover tightly and store in the fridge for at least 4 hours or overnight.

    🔪 Instructions

    1. In a pint sized mason jar, add the oatmeal, milk, pumpkin puree, brown sugar, pumpkin pie spice, vanilla extract, chia seeds, and pecans.
    2. Using a tablespoon, stir the ingredients until well combined.
    3. Place the pumpkin oats in the refrigerator for at least 4 hours or overnight.
    4. Enjoy cold or warmed up with a little whipped cream, pumpkin spice, and pecans for garnish.

    🥫Storage

    This delicious pumpkin oatmeal is great for meal prep. I like to make enough to enjoy for the whole week and store it in airtight jars in the fridge. Don't store for longer than 5 days.

    📖 Variations

    • Substitute pure maple syrup or honey for the brown sugar
    • Use a oat milk, cashew milk, or unsweetened almond milk in place of cow's milk for a vegan, dairy-free breakfast
    • I recommend whole rolled oats, but quick oats can be used in a pinch.
    • Substitute hemp seeds for the chia seeds.
    • Substitute pumpkin seeds for the pecans.

    💭 Tips

    • To enjoy these overnight oats warm, simply place in the microwave for a minute or two.
    • Be sure to use canned pumpkin puree, not pumpkin pie filling.
