    These homemade Peanut Butter Granola Bars are chewy bars that are perfect for packing in the kids lunch boxes or after school snack time. They are packed with peanut butter flavor and good for you whole grain oats.

    Ingredients for Peanut Butter Granola Bars.

    🥘 Ingredients

    Rice cereal

    Old-fashioned oats

    Light brown sugar, dark brown can be used for a deeper flavor.

    Light corn syrup or honey for a healthier bar.

    Vegetable oil, or coconut oil

    Smooth peanut butter

    Vanilla extract

    Peanut butter chips

    Sea salt (optional)

    Brown sugar in corn syrup mixture.
    The corn syrup (or honey) is one of the ingredients that makes this granola bar chewy!

    Peanut butter and vanilla are whisked into corn syrup mixture until full incorporated for a creamy sweet peanut butter sauce.
    Pouring the peanut butter mixture over top of the dry ingredients.
    This no bake granola bar is as easy as pouring the peanut butter mixture over the dry ingredients!

    Once the peanut butter and oats are combined, allow to cool for about 5 minutes, then add the peanut butter chips.

    🔪 Instructions

    1. In a large mixing bowl, fully incorporate the oats and rice cereal.
    2. In a medium saucepan over medium heat, add the oil, corn syrup, vanilla, and brown sugar.
    3. Stirring constantly, bring to a boil. Let boil for 45 seconds and then remove from heat.
    4. Add the peanut butter and stir until smooth.
    5. Pour the peanut butter mixture over the oats and rice cereal and begin to work it with a spatula until oats and cereal are fully coated
    6. Place a piece of parchment paper on a medium-sized cookie sheet and pour the mixture on top of the prepared baking pan.
    7. Spread to mostly cover the whole cookie sheet.
    8. Place another sheet of parchment paper over the mixture and using a rolling pin, flatten the mixture to cover the whole sheet and form into an even layer.
    9. Sprinkle with the peanut butter chips and a little bit of flaky sea salt (if using).
    10. Let cool for 1 hour then remove from sheet and cut into bars.

    Cover the bars with parchment paper to prevent sticking when rolling them out to fit the pan.

    Baking sheet, the sheet should have edges to aid in an even layer when rolling the bars flat.

    Once the bars are pressed out flat, allow them to cool and harden some before cutting.
    Scored granola bars on a cutting board.
    To cut the bars, score vertically in ⅓rds and horizontally in 7ths. This will produce 32 bars.

    🥫Storage

    Store this peanut butter granola bars recipe in an airtight container with wax paper between the layers to prevent sticking. They can be stored at room temperature or in the fridge up to 1 week or in the freezer up to 2 months.

    📖 Variations

    • Substitute chocolate chips for the peanut butter chips or use half and half.
    • Use honey in place of the corn syrup
    • Stir in your favorite dried fruits in place of the peanut butter chips.
    • Add ¼ cup of chia seeds for a boost of fiber.
    • Substitute almond butter for the peanut butter.
    • Coconut oil can be used in place of vegetable oil.

    Can you use natural peanut butter in this recipe?

    Yes, natural peanut butter is less sweet can be substituted for the regular peanut butter. Just be sure the oil is completely mixed into the peanut butter.

    Can I use quick oats instead of old fashioned oats?

    Yes, quick oats and old fashioned oats are interchangeable in recipes. The only difference is the quick cooking oats have been broken down into smaller pieces.
