Combine peanut butter, Crisco, granulated sugar, and brown sugar until creamy. Mix in the eggs and vanilla.

Add the flour mixture to the peanut butter mixture a little bit at a time, mixing until well combined. Dough should be firm enough to roll into a ball that holds it's shape.

Rolling the cookie dough in sugar adds sweetness and texture to the cookie and it enhances the appearance of the cookie with the sparkling texture!

Press into the cookie dough with tines of a fork to make a crisscross pattern. The Criss cross pattern gives the cookie its unique look and helps flatten the cookie before baking.

Bake for 10-12 minutes or until the cookies are browned around the edges and are no longer wet on top.

Remove baked peanut butter cookies from the oven and cool on the baking sheet for 5 minutes, then transfer to cool completely on a wire rack.
