    One Pot Alfredo with Peas and Bacon

    One Pot Alfredo is an easy recipe one pot pasta recipe that is creamy comfort food at it's best. Pasta is cooked in broth until al dente, then coated in a cheesy alfredo sauce that the whole family will love.

    Easy one pot recipes: if you are looking for easy dinner recipes for busy weeknights, then this one pot meal is one you want to try. Everything is made in the same dish, making clean up a breeze.

    Fast clean up: one pot meals make for easy dinners and easy clean up. This creamy pasta gives plenty of flavor without all the mess!

    Creamy comfort food: pasta and cream sauces are well known comfort food recipes that make a delicious meal for a cold night!

    🥘 Ingredients

    Bacon: I love to use thick cut bacon, but go with regular cut if that is what you have.

    Uncooked pasta: I used rigatoni, ziti, or penne pasta but you can use any short pasta.

    Green Peas: buy these frozen.

    Heavy Cream: this is what aids in making the creamy sauce.

    Chicken Broth - buy the boxed broth, or use a concentrated broth paste and reconstitute it with water as per package instructions.

    Fresh garlic cloves: the garlic is fresh if the bulbs are firm and the garlic has not started to dry out or sprout.

    Salt

    Black pepper

    Fresh parmesan cheese: buy the brick that you need to shred yourself.

    🔪 Instructions

    1. In a large pot over medium heat, cook the bacon over until crispy. Using a slotted spoon, remove the bacon from the pot and set aside on a paper towel to drain.
    2. Add the garlic to the bacon grease and cook for 30 seconds, stirring constantly. Add the pasta, chicken stock, water, salt, and pepper. Increase burner to medium-high heat and bring to a boil.
    3. Reduce heat to low let the pasta cook for 15 minutes, or until the pasta is is al dente.
    4. Stir in the peas, heavy cream, ½ of the cooked bacon, and parmesan cheese. Cook and stir for 2 minutes, or until the sauce is heated through and cheese has melted. Garnish with remaining bacon.

    🥄 Equipment

    I have found that the Dutch oven works best for me. A large skillet would probably work but it would need to have tall sides so that it could hold all the liquid and pasta.

    Refrigerate: store leftovers in an airtight container in the fridge up to 4 days.

    📖 Variations

    • Stick to the parmesan brick, the dried parm in a can will give the sauce a grainy texture you won't want.
    • Substitute half and half or whole milk for the heavy cream. I do not recommend using skim milk, or reduced fat milk of any type for this recipe.
    • Use boneless chicken breasts in place of the bacon. Heat a tablespoon of olive oil to the dutch oven over medium heat and add the diced boneless skinless chicken breast. Cook for 7 minutes, or until chicken is no longer pink. Remove from the pot and set aside until step 4.
    • Substitute chopped broccoli and diced red peppers for the peas.
    • Use this amazing low carb pasta to make this a low carb meal.

    💭 Tips

    • Use a microplane zester or box shredder to easily shred the parmesan cheese for the creamy sauce!
    • I do not recommend using fresh pasta for this recipe. This recipe was created based on the fact that the creamy sauce would cook the pasta. Fresh pasta will be more fragile and without experience, it could easily fall apart and fail.

    Ingredients
      

    • 4 slices thick cut bacon chopped and divided
    • 2 cups dried rigatoni pasta
    • 2 large cloves garlic minced
    • 2 cups chicken broth
    • 1 cup water
    • ½ teaspoons salt
    • ¼ teaspoon black pepper
    • 1 cup frozen peas
    • ⅓ cup heavy cream
    • ¼ cup freshly grated parmesan cheese

    Instructions
     

    • In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside.

    Tips and Substitutions

    • I highly recommend that dried Parmesan is not substituted for fresh Parmesan. Dried will give the sauce a graininess
    • Substitute half and half or whole milk for the heavy cream
    • Substitute penne or ziti pasta for the Rigatoni
    • Add cooked chicken or shrimp to the pasta for a protein boost
    • Substitute chopped broccoli for the peas
