Why You'll Love This Recipe
Simple process: just a few steps and your dehydrator does the work.
Healthy snack: no preservatives, just pure fruit flavor.
Better flavor: fresh apricots make these naturally sweet and chewy.
Key Ingredients for Homemade Dried Apricots
See the recipe card below for a full list of ingredients and instructions.

- Fresh apricots: choose ripe, firm fruit for the best texture and taste.
- Lemon juice: helps preserve the bright color and adds a hint of tartness.
- Water: dilutes the lemon juice for soaking.
- Sugar (optional): adds a touch of sweetness if your apricots are more tart.

Ingredient Substitutions
- Honey: use instead of sugar for a natural sweetener.
- Lime juice: a swap for lemon juice with a slightly different citrus note.
- Peaches: can be dehydrated the same way when apricots aren't available.
Variations on Dried Apricots
- Spiced apricots: sprinkle cinnamon or nutmeg before drying for extra flavor.
- Savoy apricots: lightly dust with chili powder for a sweet-heat snack.
- Apricot leather: puree fruit and spread thin for chewy fruit rolls.

Tips for Perfect Dried Apricots
- Uniform size: press apricot halves evenly so they dry at the same rate.
- Don't overcrowd: leave space between pieces for proper airflow.
- Check dryness: they should be pliable but not sticky when fully done.

How to Store
Store dried apricots in an airtight container at room temperature for up to 1 month or refrigerate for up to 6 months. For longer storage, keep them in the freezer.
