    Cranberry Pistachio Goat Cheese Bites have a salty, sweet, creamy crunch in your mouth to satisfy all your senses at the same time! Not to mention, these little babies are perfect for the holiday  appetizer table with their festive colors!

    I love the holiday season and all the festivities that go with it and I especially love the food! Who doesn't, right? I love serving treats that are not only delicious and fit the holiday theme, but also are low carb protein bites!

    festive-cheese-balls-7Goat cheese was never a favorite cheese of mine. I shied away from using it for a really long time. However, in the past few months my tastes seems to have changed some and I have absolutely fallen in love with it! Honestly, I could eat this entire recipe in one sitting if I allowed myself. I probably wouldn't be hungry the rest of the day, but I sure would be happy and satisfied!

    For this recipe, I decided to go with a nut that has a greenish hue to it and combine it with the chopped cranberries to make it more festive. I went with unsalted roasted pistachios. I find them very reasonably priced right at Trader Joe's.

    There is also something special about the flavors of cranberry and orange together, especially in the holiday season. So the cranberries I used were orange flavored (also found at Trader Joe's).

    Another great thing about this recipe is you can make it ahead of time. You probably should anyway so you can refrigerate for at least a couple of hours. They store in the fridge quite well. Unfortunately, I can't tell you how long other than a day or two because I ended up eating them all on my own over the course of a couple of days! However, after two days, the nuts still had crunch and I actually liked the texture better with them cold.

    Why don't you give these a try for your holiday appetizer table this year? The I guarantee you will love the flavors and if you don't like pistachios, you can always go with your favorite nut. Pecans and cashews would work well with this recipe too.

    Ingredients
      

    • 8 ounces goat cheese
    • 4 tablespoons chopped dry roasted pistachios unsalted
    • 4 tablespoons chopped dried cranberries

    Instructions
     

    • Cut cheese into 1 ounce slices. Shape into a ball.
    • Roll in cranberries and pistachios.
    • Transfer to sealed container and refrigerate at least 2 hours before serving.
