Chipped Beef Gravy is made with pieces of dried beef that are stirred into a homemade milk gravy. Traditionally served over toast, today's version is served atop a homemade drop biscuit!

When chatting with my brother Stephen about recipes that Mom used to make, he brought this one up, only he said it had to be on toast because that was how we ate it. I agreed and I truly planned to do it that way.
I brought up to Grumpy that I was going to make this recipe and he was all for it. However, when I told him toast, he begged to differ and wanted it on biscuits (sorry Steve!). I may have groaned a little because I'm not the best biscuit maker.
My Mom's Buttermilk Biscuits are the best, and I just can't make them as she does so I leave that recipe to her. Since Grumpy had to have a biscuit, I decided to just do a drop biscuit because it's kind of difficult to screw up a drop biscuit!
What is Milk Gravy?
Milk gravy is pretty basic. It is made with butter, flour, salt, pepper, and whole milk. I remember Mom making milk gravy to put on our mashed potatoes.
All my life I was surrounded by dairy cattle. My dad was a farmer when I was first born, then he moved into another career. However, he did go back to farming in 1981, the year I graduated from high school. While I didn't grow up doing chores in the barn, I was no stranger to them.
The New York Dairy Tour
Thanks to the American Dairy Association, I was able to attend the New York Dairy Tour this year. I was so excited and happy to be a part of this tour. I feel a strong connection with dairy farmers because of my past and without a doubt love dairy products!
Dairy Farmers are some of the hardest workers!
Two of my uncles are dairy farmers and one of them has moved into the next generation of farmers. By the time my dad went back to farming, I was 16 and about ready to graduate from high school. However, I had a taste of being a farmer's daughter for a little while and I can attest first hand that there is little time for play.
I don't know about you but I really love cows and have even been known to talk to them on walks! They remind me of home and my youth. In Grumpy's and my previous home, we lived right next to a pasture where the cows would wander through at night. Grumpy would call them 'The girls." I kind of miss them being right next door!
So, needless to say, I was really pleased to get to spend so much time visiting the farms. While a lot of things have changed one thing has remained constant. The farmers care about their cattle and they work hard, they are undeniably devoted!
Now back to this Chipped Beef Gravy and Biscuits! This recipe is full of delicious, good for you dairy. From the biscuits to the gravy, you are getting a delicious and nutritious product. I love the hominess and the comfort feel you get from this dish!

Tips for making Chipped Beef Gravy & Biscuits
- When making the gravy, brown the butter before adding the flour, or use bacon fat. This will give your gravy a richer flavor.
- Rinse the dried beef, it is very salty and will add a lot of salt to your gravy.
- Because of #2, do not add salt to your gravy!
- Cut the dried beef in slices for a better eating experience!
Chipped Beef Gravy and Biscuits
Ingredients
For the Drop Biscuits
- 3 cups flour
- 4 teaspoon baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- ¾ teaspoon cream of tartar
- ¾ cup butter
- 1-¼ cup buttermilk
- ¼ cup heavy cream
For the Gravy
- 4 tablespoon butter
- 4 tablespoon flour
- 4 cups whole milk
- ½ teaspoon black pepper
Instructions
To Make the Biscuits:
- Heat Oven to 450 degrees
- Preheat oven to Sift together flour, baking powder, sugar, salt, and cream of tartar.
- Using a pastry blender, cut in butter until mixture resembles coarse crumbs.
- Make a well in center of flour mixture. Add buttermilk and cream and stir with fork until just blended.
- Drop biscuits using large cookie scoop on baking sheet lined with parchment paper.
- Bake for 12-14 min until lightly browned. This will make 12 drop biscuits (2 per serving)
To make the Gravy:
- Melt butter in sauce pan until lightly browned.
- Add flour and pepper and stir until well combined.
- Gradually add milk and stir until blended well.
- Simmer until gravy has thickened.
- Add dried beef and stir to combine.
To Serve:
- Scoop gravy over biscuits that have been cut in half and garnish with fresh parsley if desired.
