    Grilled Shrimp Caesar Salad

    This Grilled Shrimp Caesar Salad recipe is a light and delicious weeknight dinner that is quick and easy to throw on the table! Grilled lemon pepper shrimp is tossed with lend smoky sweet bites that compliments the tangy homemade caesar dressing.

    Easy dinner recipes: just a few minutes on the grill and you have a light and delicious dinner salad.

    Shrimp recipe: if you love shrimp recipes you will love this quick dinner packed with flavor.

    Dinner Salad: when you are in the mood for a light dinner, hearty salad recipes are sure to fit that bill.

    Raw shrimp with tails on in a silver colander.
    Rinse raw shrimp: you can either leave tails on or remove them.

    🥘 Ingredients

    Shrimp: choose large fresh shrimp, peel and deveined. 

    Salt

    Freshly ground black pepper

    Olive oil

    Lemons: you will need fresh lemon juice for the shrimp and the dressing.

    Fresh garlic

    Anchovy paste

    Dijon mustard

    Worcestershire sauce

    Mayonnaise: you can use reduced fat or full fat mayo.

    Parmesan cheese: buy the block of cheese, you can use freshly grated parmesan cheese or shaved parmesan cheese for this recipe

    Romaine lettuce

    Lemon cut in half with citrus reamer behind it.
    Fresh lemon juice brightens the flavors in this delicious grilled shrimp caesar salad.

    🔪 Instructions

    For the grilled shrimp

    1. In a large bowl, toss shrimp with salt, pepper and olive oil.  Grill 2-3 minutes on each side until shrimp is pink.  Remove shrimp from grill and in another bowl, toss with lemon juice.

    For the caesar salad dressing

    1. Place sing the back of a spoon, mash the garlic and salt together to make a paste. Add the anchovy paste, dijon mustard, lemon juice and Worcestershire sauce. Whisk in mayonnaise until blended then stir in Parmesan Cheese. Add pepper to your own taste.

    🥫Storage

    Refrigerate: store leftover components in separate airtight container up to 4 days.

    Freeze: not recommended

    Reheat: gently reheat shrimp in microwave 10-20 seconds, until warmed through (if desired)

    📖 Variations

    • For added flavor toss shrimp with ½ teaspoon old bay seasoning.
    • Substitute your favorite seafood or firm white fish for the shimp.

    Ingredients
      

    For the grilled shrimp

    • ½ teaspoon salt
    • ½ teaspoon pepper
    • 1 teaspoon olive oil
    • 1 pound large shrimp , peeled and deveined
    • 1 medium lemon , juiced

    For the caesar salad dressing

    • 2 cloves garlic , minced
    • ¼ teaspoon salt
    • 1 teaspoon anchovy paste
    • 1 teaspoon dijon mustard
    • 1 medium lemon , juiced
    • 1 teaspoon worcestershire sauce
    • 1 cup reduced fat mayonnaise
    • ½ cup freshly grated Parmesan Cheese
    • Black pepper , to taste

    Other Ingredients

    • 12 cups chopped romaine

    Instructions
     

    For the grilled shrimp

    • In a large bowl, toss shrimp with salt, pepper and olive oil.  Grill 2-3 minutes on each side until shrimp is pink. 
    • Remove shrimp from grill and in another bowl, toss with lemon juice. Set aside.

    For the caesar salad dressing

    • Place garlic and salt in a small bowl. Using the back of a spoon, mash the garlic and salt together to make a paste.
    • Whisk in the anchovy paste, dijon mustard, lemon juice and Worcestershire sauce.
    • Whisk in mayonnaise until blended then stir in Parmesan Cheese. Add pepper to taste.

      I hear you on the heat, I tend to eat light when it's very hot outside. This salad is definitely the perfect choice on a hot day. The Lemon Pepper shrimp has me craving for shrimp now too

      Yum, looks terrific! Shrimp is a fave here as well as Caesar salad.

      I've wanted to make my own dressing for a while but haven't found anchovy paste. I've gotta track some down. I need to ask the grocery mgr at my Publix.

      What a great change up from the traditional Caesar salad. Love the grilled shrimp substitution. I'll have to try the Gourmet dressing version. I don't have a Caesar dressing go-to.

      I adore Caesar salad and have since the first time I ate it too. I'd have to sub in chicken for the shrimp here though or you'd have to do CPR on me. Great looking salad Shelby!
