Grilled Shrimp Caesar Salad
A delicious grilled shrimp caesar salad with a homemade mayonnaise based caesar salad dressing makes a great light dinner or lunch salad with a side of crusty bread!

For the grilled shrimp

large shrimp
, peeled and deveined

, juiced
For the caesar salad dressing

garlic
, minced

salt

teaspoon
anchovy paste

teaspoon
dijon mustard

lemon
, juiced

teaspoon
worcestershire sauce

reduced fat mayonnaise

cup
freshly grated Parmesan Cheese
Black pepper

Instructions
For the grilled shrimp
In a large bowl, toss shrimp with salt, pepper and olive oil. Grill 2-3 minutes on each side until shrimp is pink.
Remove shrimp from grill and in another bowl, toss with lemon juice. Set aside.
For the caesar salad dressing
Place garlic and salt in a small bowl. Using the back of a spoon, mash the garlic and salt together to make a paste.
Whisk in the anchovy paste, dijon mustard, lemon juice and Worcestershire sauce.
Whisk in mayonnaise until blended then stir in Parmesan Cheese. Add pepper to taste.
