The Buffalo Chicken Chaffle is a mini waffle recipe made with the chaffle craze of the low carb keto diet. It is made with egg, cheese, hot sauce, and almond flour and made in a mini waffle iron. These are great for lunch with a side of dipping sauce and celery.
Fans of buffalo wings will love these Buffalo Chicken Chaffles. There is just enough of the hot sauce flavor to satisfy, and the cheese that gets crisp on the outside of the waffle is crazy delicious! The best part they are only 1 net carb for 2 waffles!

Chaffles for Keto
Chaffles became all the craze about a year and half ago (or at least that is when I became aware of them). Everyone doing keto on Instagram and TikTok were making them.
I got on the chaffle train when I made this Shrimp and Avocado Chaffle Sandwich and everyone in my home absolutely loved it! I've been making chaffles since but until I made these Buffalo Chicken Chaffles, I hadn't felt the urge to blog it.
However, this chaffle recipe is the absolute bomb. I am a huge buffalo flavor fan and when I decided to toss some chopped chicken and hot sauce into the chaffle batter I realized it was a keeper recipe!
Now, when I don't have time to make Air Fryer Chicken Wings, I can grab the waffle iron and make this chaffle recipe!
🥘 Ingredients
Cooked chicken, I like to make my own Air Fryer Rotisserie Chicken, but you can buy one or you can just use leftover cooked chicken breasts or canned chicken.
Large eggs
Part-skim mozzarella cheese, this is the best bet as there is a tiny bit of starch in the cheese shreds to prevent it from sticking. Don't worry, there isn't enough of it to make a difference on the keto diet.
Hot sauce, you can use your favorite. I love to use this hot sauce.
Blue cheese crumbles
Fresh cilantro (optional)

🔪 Instructions
Step 1:
- Whisk the egg in a small mixing bowl until well combined.
- Stir in the chicken, mozzarella cheese, and hot sauce.
Step 2:
- Transfer ½ of the mixture to the mini waffle iron.Cook for 2-3 minutes, or until chaffle is golden. Repeat with remaining egg mixture.
Step 3:
- To serve, sprinkle each chaffle with ½ tablespoon of crumbled blue cheese and ½ tablespoon of cilantro.
💭 Top Tips
- Resist the temptation to lift the waffle iron lid before the light goes off. The batter will pull apart if you do so. (ask me how I know!)
- Sprinkle a little extra cheddar cheese on the bottom of the waffle maker before the batter is added. This will make it a little more crispy on the outside.
- When adding the batter to the waffle iron, be careful to not overfill it. Doing so will cause the batter to push out of the waffle iron as it cooks.
- This recipe makes 2 waffles. Divide the batter evenly in half and spread it around some with the fork to have it fill the entire circle.
📖 Variations
- Substitute a sugar free sweet chili sauce for the buffalo sauce.
- Use shredded monterey jack cheese instead of mozzarella.
- Make a sandwich with the chaffles and add lettuce and blue cheese dressing.

I made these tonight but didn’t realize I was out of blue cheese. I also just used some Sams Club canned chicken breast. But I figured, what the heck, put one on a plate, and poured some ranch dressing on it. I was so surprised - it tasted just like eating a buffalo wing! I figured it would be similar but it was almost identical! So now if I want buffalo wings, I’ll just make these! By the way, I doubled the hot sauce because the one I use (Crystal) is not that hot. Delicious!
