    These Buffalo Chicken Bowls are an easy recipe made with fresh veggies, quinoa, and chicken coated in a buffalo ranch dressing. These healthy bowls are perfect for busy weeknights and a great choice for those who love buffalo style meals.

    My whole family loved this buffalo chicken quinoa bowl! The creamy dressing that coats the chicken has great buffalo hot sauce tamed down with the ranch dressing and is combined fresh crisp veggies to make an easy weeknight dinner.

    🥘 Ingredients

    Cooked chicken, you can use chicken breast or chicken thighs. I like to use grilled chicken.

    Quinoa, I like to cook mine in chicken broth to add flavor.

    Romaine lettuce, makes the bed of the

    Cucumbers

    Cherry tomatoes

    Blue cheese crumbles

    Ranch dressing

    Buffalo wing sauce

    Green onion

    🔪 Instructions

    1. Cook the quinoa according to package instructions.
    2. In a large bowl, toss together the cooked chicken, buffalo sauce, and ranch dressing to coat well.
    3. Place 1 cup of lettuce in the bottom of 4 large shallow bowl.
    4. Top the lettuce with 1 cup of cooked quinoa, the buffalo chicken mixture, cherry tomatoes, diced cucumbers, blue cheese crumbles, and garnish with green onion slices.

    Store any leftovers in separate air tight containers in the fridge up to 4 days.

    📖 Variations

    • Substitute greek yogurt for the ranch dressing to reduce fat.
    • Substitute brown rice for the quinoa or use cauliflower rice for a low carb keto version.
    • Add black beans, corn kernels, and red onion.
    • Spice the chicken up a little more and add ½ teaspoon chipotle powder to the sauce mixture.
    • Use cheddar or colby jack cheese in place of the blue cheese crumbles.
    • Sprinkle the top of the salad with chopped cilantro leaves in place of the green onion.
    • Celery can be used in place of diced cucumbers.

    • Assemble the salad on a large wrap and make a sandwich
    • Make a keto low carb buffalo chicken bowl and substitute cauliflower fried rice for the quinoa
    • Make this Air fryer rotisserie chicken and use leftover shredded chicken in place of the grilled chicken
    • To add flavor to the quinoa, cook it in chicken broth instead of water.

    I love easy dinners and I love them even more when they are made with fresh veggies. Dinner salads are perfect for summertime when it's hot outside and you don't feel like cooking.

    These power bowls are perfect for summer. They are packed with so much protein they will satisfy you and they don't require a lot of cooking. You can easily buy a rotisserie chicken or make your own, and use shredded chicken or cube it up like I do. You can also buy precooked chicken found in the deli section of the grocery store.
