    Smoky, salty bacon wrapped around tender scallops drizzled with a bourbon maple glaze.  A perfect appetizer to share with you for my 7 year blog anniversary celebration and giveaway!

    Bacon Wrapped Scallops with Maple Bourbon Glaze
    I must admit, this giveaway was originally planned for me to offer right before my blog anniversary date, which was December 27, 2014.  I have now been blogging for 7 years and starting into my 8th! I had some situations come up that delayed this post and that is why you do see a "red & green" theme with the colors on my food presentation.  Unfortunately, there wasn't much I could do about posting this when I planned, however the giveaway was still going to happen because I absolutely LOVE this product from Pacific Merchants.

    What you see below was what I chose for my sample.  This is the oval serving tray set. What is so special about these trays? They are light weight for one, the finish is smooth, very easy to clean (they are not dishwasher safe), and they are gorgeous! They are also non-porous so those who think that because these are wood, they will absorb odors or flavors, that is not the case. You can read all about their Acaciaware on their website.
     
    You can serve anything on these trays.  Over the new year Grumpy and I loaded them up with cheese, crackers and pepperoni.  As you can see, I made some Bacon Wrapped Scallops with Maple Bourbon Glaze over the holidays for us to enjoy and served them up on these trays.  I have actually eaten my dinner on one of these trays also.  Yes, that is how much I love my set.  I cannot wait to purchase my set of dinner plates!

    Bacon Wrapped Scallops with Bourbon Maple Glaze

    Ingredients
      

    FOR THE SCALLOPS

    • 12 slices low sodium bacon , cut in half
    • 24 large scallops

    FOR THE GLAZE

    • 2 tablespoons bourbon
    • 2 tablespoons maple syrup
    • 1 tablespoon butter
    • ½ teaspoon red chili pepper flakes
    • 2 tablespoons pomegranate seeds , (optional)
    • 1 tablespoon minced chives , (optional)

    Instructions
     

    TO PREPARE THE GLAZE

    • In a large saucepan over medium high heat, stir together the bourbon, maple syrup, chili pepper flakes, and salt. Bring to a boil. Reduce the heat and simmer for 3 minutes, until the sauce reduces and thickens slightly.

    TO PREPARE THE SCALLOPS

    • Pre-cook the bacon on a large, parchment lined baking sheet at 350 degrees, until the bacon is limp and started to release its fat. Partially cooking the bacon allows the bacon to become crisp by the time the scallops are cooked.
    • Remove the bacon from the oven, transfer the bacon to a paper towel lined plate and cool for 10 minutes.
    • Preheat the broiler on high. Line a baking pan with foil and coat with cooking spray.
    • Wrap the partially cooked bacon around the scallops (½ slice bacon per scallop), and secure with a toothpick. Placing each scallop on the prepared baking pan as they are wrapped.
    • Evenly coat the scallops with the ½ of the glaze mixture. Broil for 2 minutes.
    • Turn the scallops over and evenly coat them with the remaining glaze. Broil for 3 more minutes, or until the scallops are no longer opaque and the bacon is crispy.
    • Transfer the scallops to a serving platter and garnish with pomegranate seeds and/or chopped chives.

      I would have to get the Mason Cash In the Forest Fox Mixing Bowl in Cream. It is soo pretty. I love foxes, owls, and basically woodland themed items. This is so gorgeous.

      So many wonderful items! I think I would choose the Pickle Pot with Lid, 10 Liter. I have just started making Kimchi and this would be perfect for that. I am going to make pickles and Sauerkraut, so this would be used a ton. I would also get some of the stone weights for the fermenting crocks/jars.

      First of all, congratulations on your blog anniversary! It is a huge accomplishment to reach this milestone. I know exactly how hard it is to keep a blog going at the same time you work outside the house. It's hard! But I know how much you love it. I'm so glad we met in that group so long ago. It's pretty unbelievable how much has changed since then! It's so cool that we are still connected through our love of recipes.
