    7 Layer Cookie Bars

    I needed to make something for Grumpy to have in his lunch box. I had a bag of butterscotch chips and a bag of chocolate chips that I wanted to use....I realized I had 1 package of graham crackers left and just enough coconut so that if I had sweetened condensed milk, well, then I had what I needed to make these bars!

    This happens to be another of my DIL's favorite treats so I also had her in mind when I made these. I took some bars over to my son and DIL and packed the rest up for Grumpy's lunch box treats all week.
    I remember my mom making these when I lived at home and she always called them 7 Layer bars. I have seen them called magic cookie bars also - and as a matter of fact, Brandi from Bran Appetit guest blogged about these very same bars on Zesty's blog this week!

    There is something about that sweetened condensed milk that makes you want to eat these, drink a tall glass of water, then eat another one. Yummy.

      

    7 Layer Cookie Bars

    1-½ cups graham cracker crumbs
    1 stick melted unsalted butter
    1 -14 oz can sweetened condensed milk
    1 pkg. semi-sweet chocolate chips
    1 pkg. butterscotch chips
    1-½ cup coconut
    1 cup chopped nuts

    Preheat oven to 350 degrees (325 degrees for glass dish). In a 13 x 9 inch baking pan melt butter in oven. Sprinkle crumbs over it. Mix together and press into pan. Pour sweetened condensed milk evenly over crumbs. Top evenly with remaining ingredients. Press down firmly. Bake 25-30 minutes or until lightly browned. Cool before cutting.

      I make this same recipe but without the butterscotch chips and I call them Magic Squares because whenever I have had a crush on a guy I have made these for him and magically we end up together! Thanks Magic Squares!!

      I have made these before, Shelby, and they are so rich and delicious! We call them Hello Dollies. No one knows why, unfortunately!!
