These Caramel Popcorn Balls are the treat I looked forward to every Halloween as a kid. They are chewy and sweet with a touch of grey sea salt and are the best popcorn balls recipe I've ever made. This recipe is my own take on my neighbor's homemade recipe that she would make and hand out every year for Halloween, and it's the only one I make for my family now.
Quick Overview:
- Ready in about 20 minutes, start to finish.
- One saucepan, one bowl - no candy thermometer, no fuss.
- Makes 12 popcorn balls, about 222 calories each.
- Keeps for up to 2 weeks at room temperature, so you can make them well ahead of time.

Why You'll Love Caramel Popcorn Balls
- The grey sea salt on top is what makes these different from every popcorn ball you'll find in a store or candy aisle.
- There's no guesswork here - if you can boil, stir, and pour, you can make these successfully every time.
- They hold together well enough to wrap and give away, which makes them one of my go-to treats for Halloween, fall parties, and Christmas.
Key Ingredients
- Karo corn syrup - keeps the caramel smooth and pliable instead of turning brittle once it cools, which is what lets you actually shape it into balls.
- Eagle Brand sweetened condensed milk - this is what makes the whole recipe foolproof - you just boil, stir, and pour.
- Vanilla extract - I use Watkins, but any vanilla you already have on hand works fine here.
- Popcorn - air-popped, with the unpopped kernels picked out before the caramel goes in.
- Grey sea salt - the finishing touch. If you can't find it, fine sea salt works just as well, or you can leave it off entirely.
How to Make Popcorn Balls With Caramel
Melt the butter with the brown sugar and corn syrup and bring it to a full boil then stir in the sweetened condensed milk and keep boiling - and stirring - for exactly 5 minutes. Don't walk away during this part; the sugar can scorch if it sits too long or the syrup can harden if it goes past 5 minutes.
Pull it off the head and stir in the vanilla - it'll bubble up when it hits the hot syrup, so stir carefully - then pour it straight over your popcorn. Stir gently until every kernel is coated, then let it cool for about 5 minutes, just long enough to handle without burning your hands before you start shaping.
Butter your hands well before you start shaping - real butter, not cooking spray. It adds flavor and helps you pack the popcorn balls together tightly, which cooking spray won't do.
If the mixture's still too warm to handle comfortably, food-grade gloves work well to buffer the heat. Scoop about ¼ cup at a time, press it into a ball, set it on wax paper, and sprinkle with sea salt while it's still warm enough for the salt to stick.
Substitutions
- Popcorn: air-popped is what I use, since it doesn't carry extra oil or butter that would throw off the caramel-to-popcorn ratio. Microwave popcorn works if that's what you have - just stick to unseasoned or lightly buttered, anything more flavored will fight with the caramel.
- Corn syrup: I always reach for Karo, but another brand should work about the same since it's there for texture more than flavor.
Variations
- Stir in chopped nuts before shaping.
- Roll the warm balls in colored jimmies for a party look.
- Drizzle with melted white or dark chocolate, or dip half of each ball in it.
- Add a pinch of cayenne pepper to the caramel for a sweet-hot version.
Storage
Store the popcorn balls in an airtight container at room temperature and they'll keep for up to 2 weeks - plenty of time to make these ahead of a party or trick-or-treaters showing up.
You Might Be Wondering
In this recipe it's the sticky caramelized syrup made from boiling brown sugar (for flavor), corn syrup (for texture), and sweetened condensed milk (for chewiness).
For this recipe it's the sweetened condensed milk. It makes the popcorn ball easy to bite into and keeps the sugars from crystallizing.
Not really - this caramel is thicker and chewier than what you'd want for loose caramel corn. If you'd rather skip shaping, press the mixture into a pan and cut it into squares instead.
No, the cupcake liners in my photos are just there for presentation. Once the popcorn balls cool, they aren't sticky, so there's nothing to grease.

Ingredients
- 4 tablespoons unsalted butter
- 1 cup packed light brown sugar
- ½ cup corn syrup
- ½ cup sweetened condensed milk
- 2 teaspoons vanilla extract
- 10 cups air popped popcorn
- grey sea salt for sprinkling (optional)
Instructions
- Place popcorn in a large bowl making sure there are no unpopped popcorn kernels in the bowl. Set aside until syrup is ready.
- In a large saucepan, melt butter over medium heat. Combine sugar and corn syrup with butter. Bring caramel mixture to a boil.
- Add sweetened condensed milk and continue to boil for 5 minutes. Stir constantly to prevent scorching.
- Remove from heat and stir in vanilla extract.
- Pour caramel mixture over popcorn and stir gently to coat completely. Set mixture aside to cool about 5 minutes.
- Butter your hands well before shaping. If the caramel is too hot to handle, food grade gloves can help buffer the heat. They should also be coated with butter for shaping. Scoop out heaping ¼ cup measure of popcorn mixture and shape into balls. Place on waxed paper lined baking sheet. Sprinkle lightly with grey sea salt (if using).
- Store in airtight container at room temperature.

Tweaked the directions and doubled the recipe. Boiled caramel mixture to hard ball stage (when dropped in cup cold water.) Then added the condensed milk and removed from heat source immediately- (avoiding scorching mixture). Scooped popcorn balls in to pioneer woman 1/3 measuring cup and pressed mixture with a spoon. These formed perfect balls when removed from cup. Wrapped in individual cellophane bags. Delicious recipe.
Kathy says
Does the popcorn have to be shaped into balls? Can it dry “loose” if that makes sense.
Shelby Law Ruttan says
It sounds like you are looking for something more like caramel corn. I don't recommend this for this recipe because it won't "dry" as you are looking for. It is very chewy and caramel like. You could however, press it into a pan an cut them into squares.
Bobbie says
Should the cupcake liners be sprayed with cooking spray before putting the popcorn balls in them?
Shelby Law Ruttan says
You don't have to put them in cupcake liners if you don't want to. I basically did that for photo purposes. However, if you want to display them that way, you shouldn't need the liners as they aren't sticky once they are cooled down.
Barbie says
Can you use fine sea salt? I cannot find the grey seal salt in our stores
Shelby Law Ruttan says
Hi Barbie, Yes, you can sprinkle lightly with fine sea salt, or leave it off entirely. Shelby

Linda Brockmiller says
Can you use Microwave popcorn?
Shelby Law Ruttan says
Hi Linda, you can, but I would be sure it was not a heavily seasoned or buttered popcorn. Shelby
