Chocolate and Pistachio just seems to go together. Well, actually, there isn’t much that doesn’t go with chocolate, right? This Chocolate Pistachio Bread is a real winner. Not too sweet, filled with roasted pistachio pieces. A perfect dessert, snack, or even breakfast!
I made this bread last weekend, along with a few other goodies and then on Monday promptly shipped it all off to Christopher in Florida. I told him it was coming with two slices cut and the end piece missing. Ha! Well, if I am going to blog about it I have to at least taste it, right? No worries though, I also included some homemade fudge that I will be blogging about in the near future, along with a loaf of my favorite Banana Bread Recipe so he wasn’t out too much, but 1 slice of bread. 😉 Oh the privilges of shipping to your kids baked goodies.
I would definitely make this again. Especially for someone who is a pistachio lover! This recipe could also be baked up in the cute little loaf boxes that you can find in the stores all decked out for Christmas!
I found the recipe for this bread in a very old Betty Crocker Christmas Cookbook. While most of the ingredients I used are the same, I used a different method for mixing. Betty Crocker just said to basically dump and pour and also had you melt the butter. I honestly did not read how they tell you to mix the recipe up until after I already made the bread! Ha. I never was one for reading directions, always would just move on full speed ahead. As you can imagine, I’ve had more than one disaster for that reason, but for the most part, in my 50 years, I can say I pretty much know what to do by instinct!

Chocolate Pistachio Bread

Serves: 24 servings
Ingredients
- 2/3 cup granulated sugar
- 1/2 cup unsalted butter
- 1 cup almond milk (or milk of your choice)
- 2 eggs
- 1-1/2 cups flour
- 1 cup chopped roasted pistachio nuts
- 1/2 cup mini semi sweet chocolate chips
- 1/3 cup unsweetened baking cocoa
- 1-1/2 teaspoon baking powder
- 1/4 teaspoon salt
- cooking spray
Instructions
- In a large mixing bowl, cream together sugar and butter. Add eggs, beating until incorporated.
- In a separate mixing bowl, combine flour, baking cocoa, baking powder and salt.
- Add half of the milk to wet batter and blend well. Stir in half of the flour mixture and stir until combined. Repeat with milk and flour, ending with the flour.
- Stir in nuts and chocolate chips. Pour into 9×5 glass baking pan that has been sprayed with cooking spray. Bake60 to 70 minutes or until toothpick inserted in center comes out clean. Coll 10 minutes in pan on wire rack.
- Loosen sides of loaf from pan. Remove from pan to wire rack. Cool completely before slicing.
