    White Chocolate Macadamia Nut Cookies are packed with roasted macadamia nuts and white chocolate chips. The buttery cookie dough is a perfectly chewy in the middle while still crispy around the edges.

    These White Chocolate Macadamia Nut Cookies will freeze well either before or after baking. They are perfect for picnics, lunchbox treats, or even an after-school snack to hold you off until dinner!

    ❤️ Why I Love This Recipe

    I admit, cookies are my favorite sweet of all to enjoy. And, I will choose a cookie over a brownie, cake, or pie any day of the week. I grew up loving my Nanny's Sugar Cookie and Raisin Filled Cookies. I would look for them every time I visited her!

    To me, the perfect cookie is one that is crispy and brown around the edges, with a chewy nut and chocolate filled center. This white chocolate macadamia nut cookie fits that description perfectly! I love the combination of flavors and textures from the white chocolate chips and roasted macadamia nuts in this cookie.

    🥘 Ingredients

    Unsalted butter is my choice of fat for this recipe. It lends to crispy edges on the cookie and gives it incredible flavor.

    Light brown sugar and eggs are the ingredients that add chew to the cookie.

    Granulated sugar

    Vanilla extract and almond extract for flavoring

    All-purpose flour

    Baking soda and salt are the leavening agents

    Macadamia nuts and white chocolate chips are the goodies packed inside of the cookie. I like to use a dry roasted and salted macadamia nut.

    🍽 Equipment

    Mixing bowls

    Hand mixer, used to cream together the butter and sugar mixture.

    Hand whisk to whisk together the dry ingredients before adding to the wet ingredients.

    Wooden spoon to mix in the nuts and white chocolate.

    🔪 Instructions

    Step 1:

    1. Preheat oven to 350
    2. In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
    3. Add the eggs, one at a time, mixing until thoroughly combined. Add the vanilla and almond extract and mix until combined.

    Step 2:

    1. In a medium sized mixing bowl, combine the flour, baking soda, and salt.
    2. Gradually add the flour mixture into the creamed butter and sugar mixture.
    3. Stir in the macadamia nuts and white chocolate.

    Step 3:

    1. Drop dough by teaspoonfuls onto ungreased cookie sheets.
    2. Bake for 10 minutes in the preheated oven, or until golden brown.
    3. Store in an airtight container on the counter up to 1 week or freeze up to 3 months.

    💭 Top Tips

    • To soften the butter in the microwave for 15 seconds on 30% power. Stir and repeat until butter is creamy and soft but not melted.
    • Make these White Chocolate Macadamia Nut Cookies up to 4 days ahead and refrigerate. Bring the dough to room temperature prior to baking.

    📖 Variations

    • Use milk or dark chocolate chips in place of the white chocolate chips.
    • Substitute roasted pecans for the macadamia nuts.
    • Use all vanilla extract and eliminate the almond extract.

    Ingredients
      

    • 1 cup butter softened
    • ¾ cup packed light brown sugar
    • ½ cup granulated sugar
    • 2 large eggs
    • ½ teaspoon vanilla extract

      I love white chocolate macadamia nut cookies ever since I first had them at Mrs Fields' cookie shops. In fact, the recipe I use is from her cookbook. These are my mom's favorites - she used to ask me to send some to her by mail. It is one of the best cookie flavor combos!
