    Boneless chicken thighs: you can use either skin-on chicken thighs or remove the chicken skin.

    Shoyu sauce: this is a Japanese-style soy sauce

    Brown sugar

    Onion 

    Garlic

    Fresh ginger root

    Ground black pepper

    Dried oregano

    Crushed red pepper flakes , (Optional)

    Cayenne pepper , (Optional)

    Ground paprika , (Optional)

    Green onions

    🔪 Instructions

    1. In a large bowl, using a hand whisk, mix together the shoyu sauce, brown sugar, onion, garlic, ginger, pepper, oregano, red pepper flakes (if using), cayenne pepper (if using), and paprika (if using).
    2. Add the chicken pieces to the soy sauce mixture and cover the bowl with plastic wrap. Refrigerate at least 1 hour.
    3. Preheat a grill to medium heat. Remove the chicken from the marinade and place on the hot grill. Discard marinade.
    4. Grill chicken for 15 minutes on each side, until an instant-read thermometer registers 165 degrees F.
    5. Remove chicken from grill and let rest on serving platter for 10 minutes before serving.

    Refrigerate: store leftovers in an airtight container in the fridge up to 5 days.

    Freeze: store leftovers in a freezer safe, airtight container up to 3 months.

    Reheat: warm thawed chicken on the grill or in the microwave until heated through.

    📖 Variations

    • Place chicken and marinade in the slow cooker and cook on high for 2-3 hours or low for 6 hours.

    💭 Tips

    • If using bone-in chicken thighs, be sure to purchase a higher meat weight (about 3 pounds) to accomodate for the weight of the bone.
    • For best results, if possible, cook the chicken on a hot grill. A grill pan can be used if there are no other options.
