Every summer, when the garden begins to produce zucchini, this recipe for chocolate zucchini bread is one of the first ones I make!

- Large eggs
- Granulated sugar
- Vegetable oil
- Zucchini
- Vanilla extract
- All-purpose flour
- Baking soda
- Salt
- Ground cinnamon
- White chocolate chips

How to Make Chocolate Zucchini Bread
- Preheat oven to 350 degrees F. Spray two 9x5 inch loaf pans with cooking spray. Set aside.
- Place shredded zucchini in cotton kitchen towel, roll up and twist to squeeze excess water out. Place shredded zucchini in colander until ready to use.
- In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
- In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well.
- Stir in the flour baking soda, salt and cinnamon. Mixing until dry ingredients are combined with the wet ingredients.
- Fold in the white chocolate chips. Divide zucchini bread batter evenly into prepared loaf pans.
- Bake in preheated oven for 60 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

Substitutions
Below are some substitutions you can make for the chocolate zucchini bread ingredients:
- Vegetable oil: Use melted coconut oil or Greek yogurt for a healthier option. It’ll still be super moist without the extra fat.
- White chocolate chips: Try dark chocolate chips, semi-sweet ones, or even cinnamon chips.
- Granulated sugar: Go for coconut sugar or even brown sugar for a deeper flavor
Variations
Below are a few ways to make this delicious chocolate zucchini bread recipe a little different with a flavor twist.
- Espresso Boost: Add a teaspoon of espresso powder to the mix to amp up the chocolate flavor and give you a little caffine kick.
- Double Chocolate: Throw in some extra dark chocolate chips with the white ones for that double chocolate overload.

Storage
Store chocolate zucchini bread in an air tight container at room temperature up to 4 days. For longer storage, store in the freezer up to 3 months.
Top tip
Squeeze the zucchini: After grating the zucchini, make sure to squeeze out the excess moisture with a towel or paper towels. This keeps the bread from becoming too soggy and ensures a perfect texture.
Don’t over mix: When you combine the wet and dry ingredients, mix just until everything’s combined. Over mixing can make the bread dense instead of light and fluffy.
