Grilled Pork Chops for the win!
Grumpy and I love to grill. However, we also love variety. We love our beef, but sometimes, we will get a hankering for something different. Considering he is not the biggest fan of chicken, it leaves little room outside of the red meat variety.
So, once in a while I will pull some pork chops out of the meat case and cook them up in a delicious way, like with this incredible sugar-free Chipotle marinade.

Make the Chipotle Marinade
It only takes a few basic ingredients to make this simple, sugar free chipotle sauce.. I keep it as low carb as possible by using a zero carb rice vinegar, no sugar added ketchup, and Swerve Brown Sweetener. A little chipotle and cumin powder is all the spice it needs!
Add all of the chipotle sauce ingredients to a small glass mixing bowl.
And, stir until sweetener has dissolved and sauce is smooth.
Place divide the pork chops between two large plastic storage bags (4 chops per bag) and divide the chipotle sauce between the bags, reserving about ¼ cup of sauce. Seal bag, making sure to release any air from the bag before completely sealing.
Make sure sauce is coating all the pork chops by working the bag with your hands. Refrigerate the pork chops and marinade at least 1 hour before grilling.
About 15 minutes before you are ready to cook the pork chops, preheat your grill until it reaches about 450 degrees. Remove from the refrigerator and using a pair of barbeque tongs, place chops on grill.
Turn the flame down to medium and grill pork chops 8-10 minutes, turning them over about halfway thru. Brush with reserved chipotle sauce during cooking.
