Summer Grilling
I have been making this sandwich for several years now and it never gets old. It is so fresh and delicious and brie cheese lovers will devour these sandwiches like there is no tomorrow.
It is the perfect summertime sandwich to cook on the grill outside or the grill pan inside. Garden fresh tomato slices bring out the best in this sandwich, it's the major star of the show with the brie as it's sidekick.
🥘 Ingredients

Naan flatbread, I use this brand.
Brie cheese, sliced into thin slices. This is my favorite brand for this recipe.
Large tomatoes, I used beefsteak tomatoes.
Fresh basil
Olive oil
Dijion mustard, this one is the best!

Outdoor grill or grill pan to use on cooktop. This is the grill pan I use.

🔪 Instructions
Step 1:
- Cut the two flatbread into 6 equal pieces.
- Lay the flatbread out on a board and brush the top of the flatbread with oil.
- Rub the top of the oiled flatbread with the garlic clove.
- Turn the flat bread over so it is oil side down on the board.
Step 2:
- Evenly spread the dijon mustard on the bottom half of the flatbread sandwich.
- Lay the brie cheese slices evenly over the top of the flatbread with the mustard.
- Top evenly with fresh basil.
- Place a large tomato slice on top of the basil.
- Add 1 more layer of brie cheese on top of the tomato and then place the top portion of flat bread on the sandwich.
Step 3:
- Heat the grill or grill pan over a medium heat until hot.
- Place the sandwiches on the grill and cook for 2 minutes, or until the sandwich has golden grill marks on the bottom and the brie is beginning to melt.
- Flip the sandwiches over and cook for another 2 minutes, or until golden.
- Remove from the grill and allow to sit for 5 minutes.
💭 Top Tips
- Keep a close eye if making the sandwiches on the outside grill. The bread can easily burn if the flame touches the bread.
- Buy pre sliced brie cheese.
- Pre-slice the tomatoes and lay the slices on a paper towel. This will absorb excess liquid and keep your sandwiches from getting soggy.
📖 Variations
- Substitute a firm bakery style bread for the naan flatbread
- Use mayonnaise in place of olive oil
- Substitute arugula or baby spinach for the basil
- Make an open face sandwich and place it under the broiler for 3-4 minutes, or until the bread is toasty and brie has begun to melt.
- Spread 1 tablespoon homemade basil pesto or pistachio pesto on the bread along with the dijon and eliminate the basil.
