    Easy to make: rollups require no cooking and are as easy as spreading the filling and rolling up the tortilla!

    Simple ingredients: no fuss ingredients list here, just fresh veggies, seasoned cream cheese, and flour tortillas.

    Mexican appetizers: these tortilla roll ups are the perfect addition to Mexican themed parties or dinners

    🥘 Ingredients

    Cream cheese: needs to be room temperature for easy blending.

    Sour cream: choose a good quality thick cream cheese. Trader Joe's and Publix brand are excellent!

    Fresh salsa: buy fresh salsa at the grocery store or make your own homemade salsa recipe.

    Taco seasoning: I make my own homemade taco seasoning but you can buy your favorite brand from the grocery store if you wish.

    Red and yellow bell peppers: choose fresh peppers that are firm.

    Jalapeno pepper: green bell pepper can be used if heat tolerance level is low.

    Black olives: these add a distinct briny flavor that is delicious, use green olives if preferred or they can be left out.

    Sharp cheddar cheese: for this recipe I choose to buy pre-shredded cheese as it stays separate better than if you shred your own.

    Flour tortillas: you can make your own homemade flour tortillas, or buy your favorite flavored tortilla. I used Habanero tortillas from Trader Joe's as they have spicy flavor that I love.

    Make sure cream cheese is softened so it will be creamy.

    Fold in all the mix ins with a rubber spatula or wooden spoon.

    Use a 2 tablespoon scoop to measure the filling.
    Tortilla with cream cheese mixture in center of tortilla.
    Place filling in the center of tortilla.
    Cream cheese spread over top of tortilla.
    Spread filling over top, leaving about ½ inch around the edges.
    Partially rolled up tortilla with filling.
    Roll tightly and refrigerate at least 2 hours.

    🔪 Instructions

    1. In a large bowl, with an electric mixer, combine cream cheese, sour cream, and seasonings together until smooth.
    2. Stir salsa, olives, peppers, and cheddar cheese into the cream cheese mixture.
    3. Lay tortilla flat on a hard surface. Spread 2 heaping tablespoons of cream cheese mixture onto each tortilla leaving about ½ inch around the edge of the tortilla.
    4. Roll up tortilla jelly roll style. Wrap in plastic wrap and refrigerate for at least 2.
    5. To serve, cut into 1-inch slices.

    Refrigerate: store tortilla roll ups in an airtight container in the fridge up to 5 days.

    Freeze: freezing is not recommended for this recipe.

    • Use sweet and spicy canned jalapenos in place of the fresh jalapeno pepper.
    • Substitute habanero or pepper jack cheese for the cheddar cheese.
    • Make this a low carb recipe by using low carb tortillas.
    • You can also reduce the amount of fat by using reduced fat cream cheese and light sour cream.
    • Add juice of 1 lime and lime zest to the cheese filling for added flavor.

    💭 Tips

    • If the tortillas are too stiff to roll, warm them up for 5-10 seconds (all of them at once) to soften. Then allow to cool slightly before proceeding.
