Cream cheese should be full-fat cream cheese
Pure vanilla extract for flavor
Peanut butter powder, adds flavor and stability
Granulated sugar-free sweetener, this is the brand I use
Baking powder will aid in making fluffy almond flour pancakes
Sugar-free maple syrup, not required, but if you like syrup on your pancakes, this brand is the best!
🔪 Instructions
- In a medium bowl, using a hand mixer, blend together the cream cheese, eggs, and vanilla extract well combined. Set aside.
- In a separate bowl, combine the almond flour, peanut butter powder, sweetener, salt, and baking powder. Add to egg mixture and stir until dry ingredients are well incorporated.
- Set the pancake batter aside for 5 minutes. The batter will rise and thicken.
- Melt the butter in a large non stick skillet. Once hot, turn heat down to medium low and spoon a tablespoon of pancake batter into the frying pan, spreading slightly with spoon.
- Cook slowly, carefully flipping pancake over when batter begins to bubble on top and bottom is browned.
- Cook another 30 seconds, until pancake is lightly browned, then remove from the frying pan. Serve with your choice of keto friendly toppings!

I don't recommend using this pancake batter for the waffle iron as it is quite thin.
Yes! The pancake batter needs to rest for a short bit anyway before frying and an overnight rest in the refrigerator won't hurt.
These pancakes can easily be reheated in a microwave or toaster oven.
Yes, almond meal and almond flour are pretty much the same thing. Almond meal is a little coarser.
💭 Tips
- After the batter has been mixed together, let it sit on the counter for about five minutes. This will allow the batter to rise and gain volume from the addition of the baking powder.
- Cook the pancakes in tablespoon-sized pancakes. The smaller the pancake, the easier it will be to flip.

These pancakes are quite delicious. My whole family loves them. I have to quadruple the recipe because my family will eat so many. I think these pancakes are actually better than regular pancakes. I've never had the peanut butter powder so I just used a scoop of peanut butter and it is delicious.
