    Unsalted butter

Carrots: I like to thinly slice the carrot to give it lots of little orange color bursts.

Portobello mushrooms: I use portobello because they are meaty, you can also use crimini mushrooms.

Black pepper and salt (to taste)

    Dried thyme leaves

    Garlic cloves

    Dried parsley

Chicken stock: if desired, choose a chicken bone broth like kettle fire bone broth.

Cooked chicken: this is a great way to use leftover air fryer rotisserie chicken, or any leftover roasted chicken breasts or chicken thighs (skinless).

Shirataki noodles (keto-friendly noodles found in the same section you find tofu in the grocery store or buy them on amazon.

    A package Shiritaki Noodles.

    🔪 Instructions

    2. Cook 2-3 minutes stirring frequently until mushrooms release their water and have softened.
    3. Turn heat down to low and cover vegetable mixture with lid. Simmer 5 minutes.

    Chef knife

    Wooden spoon

    Colander

    🥫Storage

Refrigerate: store any leftover Keto Chicken Noodle Soup, allow it to cool completely before transferring it to an airtight container. Refrigerate for up to 3-4 days. Reheat on the stovetop or in the microwave before serving.

Pouring broth into a soup pot.

    📖 Variations

Creamy Twist: Add a splash of heavy cream to make the soup creamier and more indulgent.

Spicy Kick: For those who enjoy heat, incorporate a pinch of red pepper flakes or a dash of hot sauce to spice up the soup.

    💭 Tips

    • Substitute zucchini noodles, spaghetti squash, or palmini noodles for the shirataki noodles.
    • Feel free to add extra keto-friendly vegetables like spinach or celery for added nutrition and variety.
    • Make it a chicken "rice" soup by adding cauliflower rice i place of the shirataki noodles.
    • If you don't have leftover chicken on hand, you can cook diced chicken breast or thighs in a large pot in a little bit of olive oil with salt and pepper over medium heat until cooked through. Use the same pan to prepare the soup. Just remove the chicken from the pot and set aside until its time to return it to the chicken soup.

Valerie, I have been too - we went from abnormally warm weather (almost 70) in March back to 50's low 60's and it has made me feel like soup often lately. Thanks!

The soup sounds wonderful. I too save my roasted chicken bones to make my broth. Thanks for sharing this with Presto Pasta Nights. This week it's actually being hosted by Gillian of So So Simple Food.

I have always put the noodles in the soup for a few minutes at the last. I'm going to try cooking them separate next time I make soup. Thanks for another great recipe.

Peggy, I did it this way because Grumpy does not like overcooked noodles in any way. Its the only way I can do it and have everything be the texture I need it to be. 🙂 Good to see you!

Nice!!! I'm still trying to make the perfect Chicken Noodle Soup. My noodles never come out right in the soup. LOL

🙂 Jill, that's why I opt to not cook them in the soup itself. Grumpy also says I am not to ever bring the soup to a boil, to slowly heat it up. HA HA, he's a soup expert I guess, he lived on soup and boxed macaroni and cheese. lol
