🔪 Instructions
- Place the onion powder, garlic powder, parsley, salt, and black pepper in a small bowl and mix to combine.
- Using ½ of the spice mixture, season chicken breasts.
- Place chicken breast in the air fryer basket and spray with olive oil cooking spray. Air fry at 400°f for 8 minutes.
- While chicken is air frying, melt butter in a saucepan over medium heat. Stir in the apple cider vinegar and remaining spices.
- Over medium-high heat, bring butter sauce to a boil, then simmer for 8 minutes, until the sauce has reduced and thickened. Set aside
- Remove chicken from air fryer and let cool for 5 minutes. Using a sharp knife, slice a pocket into the side of the chicken breast.
- Stuff the inside of the chicken with cheese and apple slices in layers.
- Return stuffed chicken breasts to the air fryer basket and using a pastry brush, coat with the reduced apple cider vinegar sauce. Cook for 12 more minutes, until internal temperature of chicken in the thickest part of the chicken without stuffing reaches 165 degrees F.
- Remove chicken from air fryer and let cool 5 minutes prior to serving.

📖 Variations
- Use different kinds of cheeses in place of the muenster cheese. I like to use pepper jack cheese, brie, or cheddar cheese.
- For a sweeter glaze, substitute apple cider or apple juice in place of the apple cider vinegar. (doing this changes the carb count and it will no longer be a low carb recipe)
- Add a little bit of red pepper flakes to the vinegar glaze before brushing over top of the chicken for a little heat boost.
💭 Tips
- When buying chicken for stuffing, look for breasts that are not too large, but yet still are thick enough to cut into and make a pocket for the stuffing. Each chicken breast should weigh approximately 4 ounces.
