Place the onion powder, garlic powder, parsley, salt, and black pepper in a small bowl and mix to combine.
Using ½ of the spice mixture, season chicken breasts.Place chicken breast in the air fryer basket and spray with olive oil cooking spray. Air fry at 400°f for 8 minutes.
While chicken is air frying, melt butter in a saucepan over medium heat. Stir in the apple cider vinegar and remaining spices.
Over medium-high heat, bring butter sauce to a boil, then simmer for 8 minutes, until the sauce has reduced and thickened. Set aside.
Remove chicken from air fryer and let cool for 5 minutes. Using a sharp knife, slice a pocket into the side of the chicken breast.
Stuff the inside of the chicken with cheese and apple slices in layers.Return stuffed chicken breasts to the air fryer basket and using a pastry brush, coat with the reduced apple cider vinegar sauce.
Cook for 12 more minutes, until internal temperature of chicken in the thickest part of the chicken without stuffing reaches 165 degrees F.
Remove chicken from air fryer and let cool 5 minutes prior to serving.
