    🥘 Ingredients

    Shredded chicken, this can be leftover chicken, rotisserie chicken, or chicken breast cooked in a slow cooker (see top tips)

    Premade pizza dough, makes this a quick and easy recipe to make for dinner!

    Hot sauce

    Ranch dressing, this is used to help tone down the spice of the hot sauce

    Mozzarella cheese, these calzones are packed with lots of mozzarella cheese!

    Blue cheese, added for flavor and is a perfect combo with buffalo flavors

    Caramelized onions, these add flavor. You can follow this recipe on how to make caramelized onions.

    Celery, because celery and buffalo chicken just go together naturally!

    Olive oil, for greasing the baking sheets.

    Premade pizza dough and precooked chicken make this calzone recipe easy to make any night of the week.

    🔪 Instructions

    1. Preheat the oven to 425 degrees F.
    2. In a large bowl, combine the chicken, caramelized onions, celery, blue cheese, and cilantro.
    3. Add the hot sauce and ranch dressing to the chicken mixture and stir until chicken is coated. Set aside
    4. In a hard work surface, divide the pizza dough into 4 sections.
    5. Flatten each dough portion out over a lightly floured surface until it is approximately a 6 inch circle. Place ¼ of the buffalo chicken mixture on one half of the dough and top ½ cup cheese.
    6. Fold over the dough to cover the filling and pinch together the edges of the dough together to seal. Bake for 25 minutes or until golden brown.

    Be sure to press the dough out on a large baking sheet so you don't have to try and move a filled unbaked calzone.

    Store any leftover calzones in the fridge up to 4 days and in the freezer up to 3 months.

    📖 Variations

    • Substitute blue cheese dressing for the ranch dressing
    • Stir in some red pepper flakes to up the heat level.
    • Substitute red bell pepper for the celery
    • Brush the top of each calzone with egg wash and sprinkle with grated parmesan cheese.
    • Substitute breaded precooked chicken tenders for the shredded chicken for added texture.

    💭 Tips

    • Press the dough out on the large baking sheet so you don't have to try and move the unbaked calzone from the counter to the baking sheet.
    • If using refrigerated premade dough, be sure to remove it from the fridge at least 30 minutes before using.

    Depending on appetite, 1 whole calzone can feed 1-2 people for a meal.

    You can make these calzones ahead of time and freeze unbaked in the freezer. They can be stored there up to 3 months. When ready to bake, remove from the freezer and let rest on the baking sheet for 15 minutes, then bake as instructed. It may take 5-10 minutes longer to bake from its frozen state.
