    🥘 Ingredients

    All-purpose flour

    Granulated sugar

    Baking powder

    Ground cinnamon:

    Salted butter: be sure butter is room temperature to allow easy blending.

    Vanilla extract: I like to use pure vanilla extract, if using imitation, the flavor will not be as strong.

    Large egg yolks: separate the yolks from the whites and save the whites for another use. Whites can be frozen in the freezer up to 2 months.

    Eggnog: you can use store bought or make this homemade creamy eggnog recipe.

    🔪 Instructions

    1. In a large bowl combine the flour, baking powder, and cinnamon.
    2. An another large bowl, using a hand mixer, mix the butter and sugar until creamy.
    3. Add egg yolks, eggnog, and vanilla to the butter mixture. Mix on medium speed until all ingredients are incorporated.
    4. Gradually add the dry ingredients to the wet ingredients. Mixing until completely incorporated.
    5. Line the air fryer basket with parchment paper and set aside.
    6. Using a small cookie scoop, form into dough balls and place it in the air fryer basket on top of the parchment paper, leaving space between each cookie to allow for spreading..
    7. Cook at 325°f for 6-8 minutes or until edges start to crisp and turn golden.
    8. Remove cookies from air fryer and cool completely on a wire rack.

    🥫Storage

    Room temperature: store cookies in an airtight container on the counter up to 5 days

    Freeze: cookies can be stored in the freezer in a freezer safe container up to 3 months

    📖 Variations

    • Substitute rum extract for the vanilla extract.
    • Use light brown sugar in place of the granulated sugar for a deeper flavor to the cookie.
    • Make an eggnog frosting with eggnog and just enough confectioner's sugar to thicken. Dip cookie top in the eggnog glaze and add a sprinkle of nutmeg. Set on wire rack until dry.
    • Sprinkle tops of baked cookies with cinnamon and powdered sugar.
    • Roll dough balls in a white sugar and ground nutmeg mixture for an added sweetness and flavor to the outside of the cookie.

    🙋 Oven Instructions

    If desired, bake cookies in a 350 degree oven on a parchment lined baking sheet for 18-20 minutes.
