    Hot Chocolate Cookies

    Hot Chocolate Cookies are chewy cookies made with hot cocoa mix and mini marshmallows on top of each cookie and baked in the air fryer. These chewy chocolate cookies are the perfect cookies enjoy after being outside in the cold!

    Air Fryer Method: making these hot cocoa cookies in the air fryer is fast and easy and you can make just a few at a time without heating up the oven.

    Gift giving and cookie exchange: these are a great cookie to share with others for a christmas cookie exchange or as hostess gifts during the holiday season.

    Gooey marshmallow: who doesn't love a gooey golden brown marshmallow and these cookies are studded with them inside and on top of the cookie.

    Ingredients for Hot Chocolate Cookies
    Just a few basic ingredients are needed to make this cookie recipe.
    Dry ingredients for cookies.
    First add all dry ingredients to a large bowl.
    Dry ingredients for cookies sifted together.
    Use a hand whisk and combine the dry ingredients.
    Creamed butter and sugar in a white bowl.
    In another bowl, cream together the sugars and butter.

    🥘 Ingredients

    Granulated sugar

    Light brown sugar: adds a caramel flavor to the cookies

    Salted butter: using salted butter allows you to eliminate salt. If using unsalted butter, be sure to add ½ teaspoon salt to the cookie dough.

    Large eggs: be sure the eggs are at room temperature before using.

    Pure vanilla extract: a flavor enhancer.

    All purpose flour: the structure of the cookie, should be aerated by stirring a spoon through the flour before scooping.

    Hot Cocoa Mix: any brand hot cocoa mix you prefer. We love Nestle or Swiss Miss.

    Baking soda: a leavening agent that aids in the cookie puffing.

    Semi-sweet chocolate chips: this adds a little bit more intense chocolate flavor, milk chocolate chips can be used in its place if desired.

    Mini marshmallows: use mini puffed marshmallows, I prefer Kraft brand.

    Wet ingredients for cookie dough.
    Add room temperature eggs to sugar mixture.
    Cookie dough without marshmallows.
    Gradually add dry ingredients until completely combined.
    Chocolate cookie dough studded with marshmallows.
    Stir in marshmallows and chocolate chips with a wooden spoon.
    Cookie dough balls on parchment paper in the air fryer basket.
    Portion 1 tablespoon sized cookie dough balls.

    🔪 Instructions

    1. In a large mixing bowl, with a hand mixer on low speed, cream together the granulated sugar, brown sugar, and butter until light with just a few clumps.
    2. Add the eggs and vanilla to the sugar mixture and mix until creamy. 
    3. In a medium bowl, add the flour, hot cocoa powder, and baking soda. Stir flour mixture a hand whisk until well incorporated.
    4. Gradually add the dry ingredients to the butter mixture, mixing on low speed until a soft cookie dough forms.
    5. Using a wooden spoon, fold in the chocolate chips and 1 cup of mini marshmallows. 
    6. Scoop dough with a tablespoon sized cookie scoop, then roll dough into ball shape.
    7. Place cookie dough ball in a single layer on parchment inside the air fryer basket leaving some space between cookies.
    8. Cook at 300°f for 6 minutes. Remove cookies from air fryer and top each cookie with 2-3 mini marshmallows. Cookies will flatten when doing this step.
    9. Return basket to the air fryer and cook for 4 minutes more, or until marshmallows are golden brown.
    10. Transfer cookies to a wire rack and cool completely.

    🥫Storage

    • Store cookies in an airtight container on the counter up to 5 days or in the freezer up to 3 months.
    • Cookie dough can be frozen up to 3 months. Line on a parchment lined baking sheet and freeze dough balls. Once frozen, transfer to a ziplock freezer bag. Remove cookies from freezer and bake from frozen state in the air fryer or oven. You will need to add 1-2 minutes cooking time if cooking from a frozen state.

    📖 Variations

    • Use mallow bits in place of the marshmallows. You can use white mallow bits or colored mallow bits!

    💭 Tips

    • Use large marshmallows if needed and cut them into smaller pieces the same size as a mini marshmallow.

    Oven Instructions

    • Bake cookies in the oven at 350 degrees on a large baking sheet lined with parchment paper for 9 minutes. Remove cookies from the oven and top with marshmallows. Return to the oven for 2 minutes more. Cool completely on a wire rack.

    Notes about cooking time for the air fryer:
    If using an air fryer, these cookies will take about 9 minutes per batch. An air fryer basket generally will hold about 5 cookie dough balls.
    Oven Instructions:
    Cookies can be baked in a 350 degree oven for 9 minutes, top with marshmallows and cook for 2-3 minutes longer, until marshmallows are golden.
