    🥘 Ingredients

    8 Inch flour tortillas: corn tortillas can also be used if preferred

    Shredded cheese: Any cheese that melts well will work here. Feel free to use Monterey jack cheeses (pepperjack or plain), cheddar cheese, or a mexican cheese blend.

    Grilled, sliced chicken

    Salsa: choose a thick brand or use your own homemade pico de gallo.

    You just need 4 ingredients for this easy air fryer recipe!

    Just toss the salsa with the chicken strips - or leave it out if preferred.

    This is where you can change it up and use your favorite barbecue sauce instead of salsa.
    Flour tortilla with cheese and chicken strips on half of the tortilla.
    Layer the cheese and chicken mixture on only ½ of the tortilla.

    🔪 Instructions

    1. In a large bowl, mix together chicken and salsa until chicken is coated.
    2. Microwave tortillas for 15 seconds to soften them.
    3. Lay tortilla on a flat surface and spread shredded cheese and chicken on one-half of each tortilla. If desired spray top of the quesadilla with butter spray.
    4. Place tortilla in air fryer basket and cook at 350°f for 4 minutes
    5. Remove tortilla from air fryer and flip over. Return to air fryer and cook for 4 minutes longer, until tortilla is golden brown and crispy.
    6. Remove and let cool. Top with sour cream, salsa, or guacamole!

    If you want a buttery tortilla, feel free to spritz some butter spray on top of the tortilla.

    Store leftover chicken quesadilla in an airtight container in the fridge up to 4 days.

    📖 Variations

    • Substitute shredded chicken, or crumbled cooked ground beef for the chicken slices.
    • Spread half of the tortilla with a thin layer of refried beans, then top with cheese and chicken.
    • Add in your favorite veggies. strips of bell peppers, onions, or mushroom slices.
    • Sprinkle a little extra cheese on top of the folded quesadilla for an extra crispy chicken quesadilla.
    • Use shredded rotisserie chicken in place of the grilled chicken strips.

    💭 Tips

    • Spritz a little bit of butter spray or spread with a thin layer of salted butter on each side of the tortilla shell to add flavor and aid in browning the tortilla. Cooking spray can be used as well.
    • Depending on the size of your air fryer you may need to adjust the size of the tortillas.
    • Buy a block of cheese and shred it on your own, you will get cheese that will melt better by doing so.
