Chocolate Zucchini Bread

Chocolate Zucchini Bread is moist and delicious. Full of chocolate flavor dotted with white chocolate chips baked in. This is a yummy and sneaky way to get your veggies in!

Every summer I have heard this comment: “When you get some zucchini you need to make some of that chocolate bread.” Yes. This is Grumpy’s favorite quick bread.

Chocolate Zucchini Bread
This recipe was found on way back in 2005 when we had our first garden with a ton of zucchini. I made it as written the first time and used mini chocolate chips but Grumpy is a big fan of white chocolate so the next time I made it I used white chocolate instead. That is when it became his favorite.

When my mom gave me some of their first zucchini the other night I knew the first thing I would do would be to make Grumpy some of this bread. The recipe makes 2 loaves – so I made one big loaf and two mini loaves. Today he is going to drop one of each mini loaves off to his dad and to his mom.

Grumpy’s mom has been enjoying homemade treats. I love the look on her face when she sees that we have brought her a goodie, especially if it has chocolate in it! BTW, she is doing really well. She won’t be going back to work any time soon, but over the last few months she has recuperated quite well from her strokes!

Chocolate Zucchini Bread is very versatile. You can flavor it up with any flavor chip you love. I think cinnamon chips would work really well too as the recipe does also include cinnamon. 🙂


Chocolate Zucchini Bread

  • 2 (1 ounce) squares unsweetened chocolate
  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 2 cups grated zucchini
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup white chocolate chips
  1. Preheat oven to 350 degrees F. Place shredded zucchini in kitchen towel, roll up and twist to squeeze excess water out. Place shredded zucchini in colander until ready to use. Spray two 9×5 inch loaf pans with cooking spray. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
  2. In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans.
  3. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

Add a little more cinnamon flavor by substituting cinnamon flavored chips for the white chocolate! This would go great with peanut butter chips as well!

    I was just wondering one thing though, what exactly does the zucchini do for the bread?? keep it moist? boost sweetness?

    Jessie, the zucchini does help make it moist! It is so darned good….just not extremely good on the waistline with a cup of oil.

    I've read somewhere that the zucchini should be "wrung out" to remove extra moisture when making bread. I don't see that step here….. am I trying to make this harder than it needs to be?

    This is delicious and has – already become a favorite here! I made mini-loaves so they could "travel" easier (plus I like the end pieces!). Mine was a little dry but i think that could be because I forgot to set the time… LOL!
