Pumpkin Spice Donuts

Ingredients
- ½ cup vegetable oil
- 3 large eggs
- 1 cup sugar
- 1½ cups pumpkin puree
- 1½ teaspoon pumpkin pie spice
- 1½ teaspoon salt
- 1 teaspoon baking powder
- 1½ cups plus 2 tablespoons all purpose flour
- 3 tablespoons sugar
- ½ teaspoon cinnamon
Instructions
- Preheat the oven to 350°F.
- Lightly spray mini doughnut pans with cooking spray. If you don't have doughnut pans, you can bake these in a standard or mini muffin tin.
- In a large bowl, using a hand whisk, mix together the oil, eggs, sugar, pumpkin, spices, salt, and baking powder until smooth. Add the flour, stirring just until smooth.
- Fill the wells of the doughnut pans about ¾ full; I use a piping bag to pipe the batter into the doughnut pan. Bake the doughnuts for 15 to 18 minutes, or until a cake tester inserted into the center of one comes out clean.
