Warm sweet spices combined with canned pumpkin in a batter perfect for waffling. Top off with a Pumpkin Praline Syrup topping and these are a perfect fall breakfast for the weekend! These Pumpkin Spice Waffles with Pumpkin Praline Syrup are my second contribution to #PumpkinWeek!
Fall is here and I think I have "fall food fever". I get it every year when the weather starts to have a little chill in the air early morning and evening. It makes me think of apples, pumpkin, warm spices, and baking and gives me such a great feeling on the inside.
In our house we go in spurts. sometimes pancakes, once in awhile french toast, and even more once in awhile eggs hit the breakfast table. With the feeling of fall in the air, I was feeling like pumpkin and started thinking waffles. But, it was the Pumpkin Praline Topping that topped it off!
As I was making these my mind went to what we could use to top the waffles with - other than plain maple syrup. Inspiration hit me as I was putting all but 2 tablespoons of what I had left of my canned pumpkin. I could still use my coveted maple syrup, and just thicken it up to make a pumpkin flavored praline topping!
This recipe is a definite keeper! I hope you will make and enjoy it and don't skip the topping. The topping makes this recipe out of this world! I also used this topping as a dip for the homemade apple fritters I shared with you last week and you could even stir some of this into your morning bowl of oatmeal!
- 1-1⁄2 cups all-purpose flour
- 3 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- ½ teaspoon salt
- 2 eggs
- 1⁄4 cup firmly packed brown sugar
- 1 cup canned pumpkin puree
- 1-2⁄3 cups milk
- 2 Tablespoons unsalted butter
- Mix together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in large bowl.
- In another bowl, add eggs, sugar, pumpkin, milk, and butter and whisk together well.
- Gently fold in the flour mixture.
- Cook according to your waffle iron directions.
