    This Glorified Rice recipe is a popular dessert salad made with rice, sweetened cream, and marshmallows topped with candied maraschino cherries.

    Cooked rice, use long grain white rice like jasmine or basmati rice. Long grain rice will stay separate after cooking making it perfect for this dessert salad.

    Whipping cream, heavy cream that will be whipped with sugar for the dressing on the rice salad.

    Confectioner's sugar, also known as powdered sugar.

    Miniature marshmallows, rainbow marshmallows are traditional, but if you can't find them, regular ones can be sued.

    Crushed pineapple

    Maraschino cherries

    Whipping cream in a bowl with a hand mixer.
    Use an electric mixer to whip the heavy cream until fluffy and stiff peaks form.

    🔪 Instructions

    1. In a medium bowl, combine the cooked rice, cherries, and pineapple. Set aside.
    2. Add the whipping cream, confectioners sugar, and vanilla extract to a large bowl.
    3. Using a hand mixer, whip cream for 5 minutes, until stiff peaks form.
    4. Fold in whipped cream into rice mixture.
    5. Fold in marshmallows and chill up to 4 hours. To serve, top with extra maraschino cherries (if using).

    Use a mesh strainer to press the pineapple juice from the crushed pineapple.

    🥫Storage

    Store salad in the refrigerator up to 2 days. This salad will tend to get watery and loose if it sits much longer than that.

    📖 Variations

    • Substitute 2 cups of thawed cool whip topping.
    • Substitute fresh pitted cherries for the maraschino cherries.
    • Stir in ½ cup chopped roasted pecans
    • Stir in a can of well drained fruit cocktail
    • There are plenty of flavored marshmallows on the market. Substitute your favorite in place of regular.

    💭 Tips

    • Use leftover cold cooked rice or cook the rice the day before and store it in the fridge until ready to use.
    • Use a long grain rice for a fluffier and better bite.
    • Be sure to drain the pineapple well. I use a mesh strainer and press the pineapple to extract all the juice.

    If you are in a hurry, yes. Just follow the instructions on the back of the packaging to cook the rice.

    Marshmallows in a rice salad, and a sweet rice salad, sounds kind of crazy but there is something magical about marshmallows in this Glorified Rice salad! The longer the salad sits, the texture of the marshmallow changes. It doesn't disappear, but it kind of puffs up more and is not as firm!

    Ingredients
      

    • 1 cup cooked white rice
    • ½ teaspoon vanilla extract
    • 1 cup miniature marshmallows
    • 13.5 ounces crushed pineapple
    • 1 cup heavy cream whipped
    • ⅓ cup powdered sugar
    • 2 tablespoons drained chopped maraschino cherries
    • 6 whole maraschino cherries for garnish

    Instructions
     

    • In a medium sized mixing bowl, combine the cooked rice, cherries, and pineapple. Set aside.

      You're driving me NUTS with all of this food. 🙂 I mean that in the nicest way.
      I'm in the process of losing my winter weight that I gain EVERY year and doing great but I had to try this recipe.
      YUMMY! It is so very good. It was all gone in two days although I let my husband eat a big share. I will certainly make this again.
