    This Shrimp Tortilla Soup recipe is ready in under 30 minutes and a one pot meal that is low carb and perfect for those following healthy meal plans. It is an easy to make shrimp soup recipe is full of vibrant flavors and texture and it was a huge hit with the whole family!

    This is not your typical tortilla soup recipe as I skipped the black beans to make this recipe as low carb as possible I used the ingredients below, substituting mushrooms for the beans. You could use chopped cauliflower if you don't like mushrooms.

    Ghee: this is clarified butter, where the milk solids have been removed.

    Yellow onion 

    Celery 

    Carrots

    Mushrooms 

    Chili powder

    Cumin

    Chipotle chili powder

    Garlic powder

    Fresh limes

    Chicken broth

    Rao's Homemade Marinara sauce

    Raw medium shrimp

    Avocado 

    Cilantro

    It's as simple as saute, add the sauce and shrimp, then simmer!

    🔪 Instructions

    1. In a large soup pot over medium-high heat, melt ghee.
    2. Add onion, celery, carrots, and mushrooms to ghee and cook 5 minutes, until vegetables are translucent and mushrooms have released their water.
    3. Sprinkle veggie mixture with cumin, chili, chipotle, and garlic powder and stir to combine.
    4. Add chicken broth and Rao's Homemade Marinara Sauce to vegetables. Cover and let simmer about 5 minutes over medium heat.
    5. Add raw shrimp and lime juice. Stir to combine. Cover soup pot and simmer 5-7 minutes, until shrimp are no longer opaque.
    6. Serve hot with desired toppings.

    Refrigerate: store leftover soup in an airtight container in the fridge up to 4 days.

    Freeze: store in a freezer safe, airtight container up to 3 months.

    Reheat: warm thawed soup on low heat in a large saucepan until warmed through.

    • Substitute seafood broth for the chicken broth.
    • Use extra virgin olive oil or butter in place of ghee

    💭 Tips

    • To enjoy the tortilla stips with this soup, buy the low carb or zero carb flour or corn tortillas. Cut into strips and fry in hot oil until crispy and brown.
    • Remove the shrimp shells and make your own homemade shrimp stock!

    Ingredients
      

    For the Soup:

    • 2 tablespoons ghee or butter
    • ¼ cup diced onion
    • ¼ cup diced celery
    • ¼ cup diced carrots
    • 2 cups chopped mushrooms
    • 1 tablespoon chili powder
    • ½ tablespoon ground cumin
    • ½ tablespoon chipotle chili powder
    • ½ teaspoon garlic powder
    • Juice of 1 lime
    • 2 cups chicken broth
    • 2½ cups Rao's Homemade Marinara Sauce
    • 1 pound raw shrimp peeled and deveined

    Toppings (Optional)

    • 1 avocado diced
    • ½ cup cilantro chopped
    • ½ cup red cabbage shredded
    • Jalapeno slices
    • Lime wedges
