Sweet & Spicy Caramel Corn
Adapted from Allrecipes.com: My Friend's Amish Caramel Corn
1 cup butter
½ cup corn syrup
2 cups brown sugar
½ teaspoon grey sea salt
2 pinches (or to taste) of red pepper flakes
1 cup unpopped popcorn
1 teaspoon vanilla
½ teaspoon baking soda
Pop corn with air popper. Place the popped popcorn into large roaster pan.
Preheat the oven to 250 degrees F. Combine the brown sugar, corn syrup, butter, pepper flakes and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.
Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes. Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces. Allow to cool completely, then store in airtight containers or resealable bags.

This is so funny Shelby. I was just thinking of how I need to make some caramel popcorn and bam!, there it was on your site. Also, we've already gone through our first bag of candy corn, the autumn mix kind. My husband loves candy corn. Like you said, I have to fill my candy dish with something.

Melt 2 Tbsp of your Red Pepper Spice Blend from http://www.madewithlove.ca with 1/4 cup butter stir together 3-5 minutes and pour over a batch (1/2 cup kernels)of air or kettle popped corn, scraping all the yummies out of your pan....amazing. We are all addicted!

Sounds wonderful, never thought of adding red pepper flakes to carmel corn. Will have to try it out.

Love the addition of the spice! I'm with you on not liking the sticky kind of caramel corn. My godmother made the best and she'd give me my own big bag of it every year for Christmas. No one could make caramel corn the way she did.
