    Heart Shaped Veal Meatloaf

    This Veal Meatloaf recipe can be shaped into a heart or loaf and is a delicious way to celebrate special occasions or Sunday dinner with your loved ones. It is a low carb take on the traditional meatloaf recipe with only 5 net carbs per serving!

    Low carb meatloaf: this meatloaf recipe uses a lean meat and low carb ingredients without sacrificing flavor.

    🥘 Ingredients

    Ground veal: a lean meat that is lighter in color than regular ground beef. 

    Coconut flour: used in place of Italian bread crumbs to aid in binding the meatloaf, adds fiber and reduces carbohydrates.

    Chicken broth: used to add flavor, note that if you use a bouillon cube it may lend a yellowish tint to the meatloaf depending on the brand you use.

    Large eggs; aids in binding the meatloaf.

    Garlic cloves

    Green onions 

    Fresh rosemary

    Salt

    Black pepper

    Sugar-free ketchup

    Brown sugar substitute: this is optional, if you like sweet and tangy ketchup glazes, this is the ingredient to use to recreate that flavor.

    Yellow mustard

    Bacon 

    Olive oil cooking spray

    🔪 Instructions

    1. Preheat oven to 350 degrees f.
    2. Line baking sheet with aluminum foil and spray foil with cooking spray. Set aside.
    3. In a small bowl, combine ketchup, brown sugar substitute, and mustard. Stir until well combined. Set aside.
    4. In a large bowl, combine ground veal, coconut flour, chicken broth, eggs, garlic, salt, pepper, and rosemary.
    5. To make a large heart, place meat mixture on foil-lined baking sheet and flatten the mixture slightly, narrowing it at the bottom for the heart V. Press your thumb into the center of the top of meatloaf mixture to create an indentation and heart shape. 
    6. Top meatloaf mixture with ketchup topping and using back of a spoon, spread it out to the shape of a heart.
    7. Place meat loaf in preheated oven. Bake for 30 minutes, or until internal temperature reaches 160 degrees. 
    8. Allow finished meatloaf to rest for 10 minutes before serving. Garnish with bacon, additional chopped fresh rosemary, or cilantro if desired.

    🥫Storage

    Refrigerate: store in an airtight container in the fridge up to 5 days.

    Freeze: store in a freezer safe airtight container up to 3 months.

    Reheat: warm thawed meatloaf in the microwave until warmed through.

    📖 Variations

    • Use a combination of ground beef and ground pork in place of the veal. Or, use any mixture of meat you prefer.
    • Tomato sauce can be used in place of the sugar free ketchup.
    • Raw onion can be used in place of green onions. Just be sure to dice them finely.
    • Add minced red or green bell peppers to the meat mixture.

    💭 Tips

    • To make mini heart loaves, divide meatloaf mixture into 4 or 6 equal parts. Follow directions in shaping into mini hearts or loaves.
    • Using the microwave to cook the bacon in a heart shape is the best way to get results you want. On a microwave safe plate, place bacon strips in a heart shape. Cover with a paper towel and microwave on high up to two minutes, until crispy. Allow the bacon to cool completely before removing from plate so it will retain the heart shape.
