    Champagne Marinated Shrimp and Fruit Salad is a delicious way to ring in the New Year! The Champagne Dressing has a citrus background with a slight touch of sweet heat that compliments both the shrimp and fruit salad. Champagne Marinated Shrimp and Fruit SaladWhere has 2018 gone? Can you believe it's almost time to ring in the new year? In our home it’s usually a laid-back night for my husband and I. We’ll enjoy some special food, then if we can stay awake, we share a bottle of bubbly at midnight as we watch the ball drop in Times Square.

    Champagne Marinated Shrimp and Fruit Salad

    This year we will ring in the new year with this Champagne Marinated Shrimp and Fruit Salad combining what are considered lucky foods.  As a bonus, the recipe also leaves more than enough bubbly for the midnight toast to share with loved ones. 

    Champagne Marinated Shrimp and Fruit Salad

    To make Champagne Marinated Shrimp and Fruit Salad you will need the following ingredients:

    • Champagne (you can buy a very inexpensive brand such as Brut (I paid a little over $5 for this bottle).
    • Orange and Lemon juice and zest.
    • 1 Mango
    • 1 Pomegranate
    • Honey or Truvia Nectar 
    • Salt
    • Crushed Red Pepper (optional)

    The freshly squeezed lemon and orange juice, along with the zest of each citrus fruit, really makes the Champagne Dressing pop!

    The dressing/marinade can be whizzed up in no time flat using the NutriBullet. If you don't have one, a sturdy wire whisk will work well also. This recipe will yield about 1 cup of  Champagne Dressing, of which you will divide in half. One portion to marinate the shrimp and the other portion to marinate the fruit salad.

    Greece, the Pomegranate, luck, and fertility for the New Year.

    In a Greek tradition, families will toss a pomegranate against their front door when the clock strikes midnight on New Year’s Eve. The more seeds fall out, the more luck and fertility that household will be blessed with.

    How to free the arils from a Pomegranate without tossing it against your front door!

    1. Using a paring knife,  cut off the flower end (pointed) then from the bottom of the fruit.
    2. Scored into the skin up to the flower end on both sides, allowing you to twist and break the fruit in half.
    3. Over a bowl of water, break it into quarters.
    4. Pull out the seeds with your hands under the water to prevent juice from squirting all over your surface.
    5. The seeds will fall to the bottom while the white pith floats to the top.
    6. Using a small strainer for assistance, remove the pith, and drain the water leaving you with only the pomegranate seeds!

    In the Philippines, round shapes representing coins are believed to symbolize prosperity in the new year. While the mango is diced up in this recipe, it starts out in a circular shape!

    A quick and easy way to dice your mango!

    • Start with a ripe, firm, and unpeeled fruit. 
    • Stand it on its end with the stem side down.
    • With a sharp knife cut from the top of the mango, down one side of the pit. Repeat with the other side.
    • With each half, make lengthwise and crosswise cuts in it, but try not to cut through the peel.
    • Bend the mango halves and have the “cubes” peel off using your fingers or use a paring knife to cut them away from the peel.

    In the US, it’s customary to eat leafy greens and beans to symbolize paper money and coins for wealth in the new year.  Pork is also a traditional food because pigs dig with their snout, representing forward movement or progress.     Ingredients
      

    For the Dressing:

    • ½ cup Brut sparkling wine
    • ½ lemon , juiced and zested
    • 1 mandarin orange , juiced and zested
    • 1½ tablespoon honey
    • 1 tablespoon extra virgin olive oil
    • Pinch of salt
    • Pinch of red pepper flakes

    For the Cocktail

    • 1 mango , diced
    • 1 pomegranate
    • ½ cup sliced green grapes
    • ½ cup whole green grapes

    Other Ingredients

    • 1 pound 26-30 count cooked shrimp , thawed

    Instructions
     

    • In a medium sized mixing bowl, mix the mango, pomegranate seeds, sliced grapes and whole grapes. Set aside.
    • In a 2 cup measuring glass, whisk together the champagne, lemon, mandarin orange, honey, olive oil, salt, and red pepper flakes.
    • Pour the dressing over fruit and toss. Add a pinch or 2 of salt to taste. Allow to sit and marinate for at least ½ hour. 
    • With a slotted spoon divide ½ of the fruit into 2 shallow champagne glasses. Place one shrimp on top and 5 around the rim of the glass.

      We always have shrimp cocktail for NYE but this year I'm going to switch it up and make this shrimp fruit salad.
