Butterscotch Haystacks are a simple, no bake treat made by stirring together melted butterscotch chips, peanut butter, crispy chow mein noodles, and mini marshmallows. They're crunch, sweet, and so easy to make for any occasion.

This recipe always feels just right for the holidays and it reminds me of the playful crunch and cozy butterscotch flavors in my favorite Butterscotch Chocolate Chip Cookies recipe.

Why You'll Love Butterscotch Haystacks
Easy method: these no bake cookies come together in minutes.
Fun texture: the mix of chow mein noodles and marshmallows gives every bite a great crunch.
Holiday favorite: a classic for cookie trays and no bake Christmas cookies.
Key Ingredients for No Bake Cookies
See the recipe card below for a full list of ingredients and instructions.
- Butterscotch chips: melted into a silky base that gives these haystacks their signature flavor.
- Creamy peanut butter: adds richness and helps bind the mixture.
- Chow mein noodles: the crisp, light noodles create the signature haystack texture.
- Mini marshmallows: add soft pops of sweetness that contrast the crunch.
Ingredient Substitutions
- Use white chocolate chips instead of butterscotch chips for a lighter flavor.
- Swap almond butter for peanut butter if you prefer.
- Try rice cereal in place of chow mein noodles for a softer crunch.
Variations on Butterscotch Haystacks
- Add festive sprinkles on top for holiday flair.
- Stir in dried cranberries for a sweet-tart contrast.
- Mix in salted peanuts for a salty and crunchier finish.
Helpful Tips for Better No Bake Cookies
- Warm the butterscotch slowly so it melts smoothly and doesn't seize.
- Work quickly once you combine everything. The mixture stiffens fast.
- Use two spoons to drop the haystacks neatly onto the wax paper.
How to Store
Store the haystacks in an airtight container in the refrigerator for up to 5 days.

Butterscotch sundaes from Dairy Queen were the very first treat I ever remember as a young child so I know these would be special as well.
